Dairy cows that are milked twice per day are the only cows that produce milk year round. The reason for this is because the more you milk a cow (or any mammal for that matter) the more milk will be produced--it is the simple concept of supply and demand.
You can also stop milking a cow in order to get her to become what is called a "dry cow"--a non-milk producing cow.

Answer to original question: Because they have been stimulated by being milked out once or twice a day on a regular routine. Women DO NOT produce milk only during pregnancy, but like ALL OTHER MAMMALS, start lactating right AFTER pregnancy (or birth). A woman can produce milk year-round just like a cow or goat or any lactating mammal can, if she's stimulated enough (by milking her out every so-often). First question in Extra Info: There is NO difference. All mammals, human or non-human, give milk RIGHT AFTER BIRTH, no matter if they're domesticated or not. It's the fact that these "domesticated" females are stimulated constantly by these milking machines (simulating the suckling action of their offspring) that make them produce milk constantly. They can also continue milk production during pregnancy, but only if they've given birth before-hand. ALL female mammals are capable of doing this. Second question: Yes. See above paragraphs. Third question: YES. As with all female mammals, there is a process called "Weaning." This is where not only the offspring is trained to stop relying on milk, but also where the dam ceases milk production. Women do this after several months of breast-feeding their children, cows, goats, sheep, pigs, cats, dogs, lions, etc. all do this when their offspring have overgrown their desires for milk production. This is called Drying up. In Dairy cows, milk production is stopped by not milking the cow at all, and letting her "Dry up" for several weeks, usually after 10 months of lactation, 2 months prior to the birth of her next calf. In beef cows, sheep, goats and pigs, drying up occurs when the offspring are taken away (when they are old enough). In the wild, drying up occurs when the mother no longer allows her young to suckle.

After giving birth to a calf ,the cow gives milk for 190 to210 days depending on the breed, and not the year round as said by you. They produce the milk to feed their progeny to raise them up. In fact we steal the calf's share of milk for our use. In many parts of India, the tribals and Aborigines do not draw milk from the cows at all. Camel, goats, mares and tigress also produce milk, the periodicity of which is not known to me.

Not all the year around. Only after birth of a calf. And you are depriving the poor calf and drinking up the milk thats meant for the calf. Drink water instead.
