Why the Jaggery after some time should become bad?How to presearve it for long time?

Keeping it in an airtight container would probably help. The refrigerator might be a good idea. I think the main thing is to keep if from drying out too much.

It is because of the fat in jaggery, it is a refined palm sap and retains a small amount of the palm oil in it, as such it can go rancid fast than regular sugar, like granulated white, brown or castor.

I am a former chef from Canada and have been using Jaggery for many years and find even though it can be hard keeping it wrapped in a piece of paper, waxed or kitchen towel and in a plastic bag in the frig or freezer does allow you a bit more usage.

I first used it when in Singapore years ago and now use it for sweets and in my Indian cuisine, if you want keep some in the frig and wrap the other portion and keep it in the deep freeze until the other piece has been used.
