steak with blue cheese sauce

Sauce: very easy but real nice and kinda masks the flavor if the meat ain't perfect.
Blue cheese
Cream
white wine
start by heating a bit of white wine untill the alcohol evaporates
add a bit of blue cheese in crumbles and add some cream the trick of the sauce is to find the balance between the cream and the salty flavor of the cheese to do this just add a bit of each one at a time untill it's to your liking. (you can add a bit of pepper for extra seasoning)
the steak
heat a pan with a mix of butter and oil till nice and hot. season the steak to your liking (when making blue cheese sauce I like to put a bit of the cheese on top) and brown on both sides. When the meat is brown turn down the heat and allow the steak to cook to desired style (rare, medium, well done) This way of cooking even the cheaper cuts stay reasonably tender.

Enjoy

My mom is a chef, had a cookbook published, pbs cooking show and several cooking schools in the midwest-

i know whats up here :)

First you gotta pick a steak-

"Marbled " is a term in reference to the amount of fat(flavor) in a cut of meat-

These are the cuts to get- all the others are gross shoulder and butt cut steaks- they are tough and NASTY!

Filot Mignon- lightly marbled- less flavor but SUPER awesome tender!

NY Steak- Medium marbled- slightly tougher )but not a tough steak) lots of flavor and a very popular steak!
* The Kansas city strip is the same cut- however it has the bone attached- this produces more flavor!

* You can purchase these steaks together before they are separated by a butcher- Its called the Porterhouse steak- also has a bone attached for super flavor.

And the bad boy steak is the Ribeye- Its heavily marbled but SO Freakin Good!

To prepare is simple! Don't use steak seasoning or any of that garbage!!!!! Let the steaks acheive room tempeture before cooking. This allows the tendons to relax- once they are room temp AND DRIED (with paper towels) simply sprinkle salt and pepper on both sides. I like to grill- so about 3 minutes on each side will give a a nice medium steak (for thick cuts) For indoor steaks do the Filot Mignon- Use a fry pan and about 2 tablespoons of olive oil . Cook filet for 1 (6oz) minute each side and finish off in the oven at 350 for ten minutes-

This was the most I have ever written for an answer :) I'm off to bed! Sorry about anthing mispelled! exhausted!

good luck and congrats on getting married!

First get a couple of good rib eye steaks. Fire up the grill and get it hot. Take the steaks and place them in a dish and all you need to put on them is "all season" and rub it on both sides. Let them sit at room temp while you fix the asparagus. The smaller asparagus is better. Now here is how you fix it. Put it into a oven safe dish (pyrex or something). Take some butter (the real thing here) and scatter pats of butter around on the asparagus. Add salt and pepper. Place a cover on the dish and put in the oven for 25 minutes or until the asparagus is tender to cut with a fork. Back to the steaks. Put them on the grill and cook them to your desired wellness (med rare is my favorite). While the steaks are cooking, you shoud be preparing the sauce. Berneice sauce (it's made by Knor and comes in a package. You can find it with the hollendace sauce. Prepare it according to directions. This goes well over both the steak and asparagus. Rich and delicious. Rolls or bread of some sort optional. Blackberry cobbler with vanila ice cream for desert. Here is a cooking site you might enjoy.

Congrats on being newly married! :D

Since you are new at this, I'll keep this whole meal very easy for you to do, k?

I suggest for you to get these:
a couple of nice steaks, the less fat the better.
a bottle of BBQ sauce, something with garlic is very tasty.
a box of 'Potato Buds', to make some mashed potatoes.
milk and butter for the potatoes.
a bag of ready-mix salad and a bottle of salad dressing.
a can of veggies, corn is good. ;)
a bottle of red wine would go nicely with the steak.
a candle for the finishing touch.

Set the table before you start cooking, it's easier thatta way.
Put the candle in the middle of the table.
Put salad into a bowl, put that and salad dressing on the table.

Pour the BBQ sauce into a large skillet, and heat to a bubbling boil.
Turn the heat under the skillet down to med-high.
Add steak/s into the BBQ sauce in the skillet and cook for 3 minutes.
Turn the steak/s over and cook for 3 minutes on the other side.
Take the skillet off the stove and put a lid on top to keep the steak warm.
(If you don't have a lid, a plate works well for a cover)

Follow directions on the box of 'Potato Buds' to make mashed potatoes.
After cooking, remove pan from heat and put lid on top to keep potatoes warm.

Pour the veggies into a small pan and heat to boiling, then put into a bowl.

Take the steak/s out of the skillet and put on a large plate.

Pour the BBQ sauce from the skillet into a bowl, can spoon it over the steak just before eating.

Put mashed potatoes into a bowl. (uncover them last cuz they get cold fast)

Put all the food on the table.

Light the candle.

Pour the wine.

Turn off the lights.

Tell your hubby that dinner is ready. ;)

Enjoy!!

I'm a hopeless red meat cook too.

We have a steak sprinkle that was about $2 from the supermarket, that is nice to put on just after you start cooking, adds a great flavour.

If you have more time (overnight is great, or a few hours), try a steak marinade - can be bough in the sauce aisle of the supermarket. Put the steak in a container, pour some marinade over it, and leave for a few hours.

I like to cook it on the barbeque to get a smokey flavour too.

To cook the best steak, fire up the grill, try some of the mesquite bricketts, they add the flavor from the smoke. Grill about 4 or 5 minutes on each side and yum! you can toss some veggies on a kabob skewer before you put on the steak, and there you have a wonderful meal.
Trust me, some day you'll look back at your lack of culinary expertise and laugh! I sure do, i can remember not knowing how to cook!

I use seasonings if I have less time or you can use Italian dressings for marinade. All you need is 30 minutes minimum to marinate. The steak tastes delicious this way and you can also use it on chicken.

As for sides it all depends on what you like. Some easy accompaniments are canned veggies, Au gratin potatoes, mac & cheese, fries, flavored rice...the possibilities are endless. Depeding on what you serve with the steak you can dress it up or down.

Steak is the easiest if you have a grill. About 5 minutes on high per side.
