Would these be the wafers that you put on top of ice cream or would it be the wafer biscuts with cream in them?

As they are referred to as cookies - my guess would be the wafer biscuits with the creamy layers - I get these from coles in their own make which are fine - my family love them anyway (other brands seem to do packets with mixed flavours in the packet, some of the biscuits are beige(vanilla), some pink(strawberry) some chocolate). At least with the coles you can get only chocolate ones which would be ideal for your recipe.

The wafers you put on top of ice cream sound like the ones. You can get them in just about any super market.
