Stew Meat
got this recipe from my Mom. Now all my siblings and I use this recipe when we want something easy and delicious. The meat comes out melt-in-your-mouth tender cooked in its own gravy.
by Harried Mom
1 lb beef stew meat (already cut up)
1 (10 3/4 ounce) can French onion soup (undiluted)
1 (10 3/4 ounce) can cream of mushroom soup (undiluted)
Mix together french onion and cream of mushroom soups in a 2 1/2 qt casserole dish.
Add stew meat raw, making sure that all the meat is covered by the soup (it browns and cooks in the oven with the soups).
Cover and place in 350 degree oven for 3 hours.
Serve over steamed rice or noodles with a salad.
This recipe doubles or triples easily (just add one can of either soup per extra pound of meat).
I usually make extra and freeze it for another night

I'm not sure if I totally understand what your question is, but here is an idea for that stew meat of yours:
Beef Stew and Dumplings
1 -2 lbs of stew beef, cut chunks into bite sized pieces and season generously with salt and pepper
3 T olive oil, place in stew pot and heat
1 T kosher salt
1/2 tsp fresh ground pepper
2 T Worcestershire sauce
3 T Barbecue sauce
3 cloves garlic, minced
1 yellow onion, diced
3 carrots, peeled and cut into chunks
3 potatoes, peeled and cut into chunks
1 small package frozen peas
2 T fresh thyme
1 tsp rubbed sage
1 bay leaf
1 15 oz can diced tomatos
2 boxes beef broth
1 box Bisquick
Saute onions, garlic, and meat in olive oil until meat is seared and onions are translucent. Add remaining ingrediants and cook on medium-low for 2 hours. Season to taste and place on simmer for another hour or so. Bring liquid to a boil and add a mixture of 3 T cornstarch mixed with water. Stir until sauce thickens slightly and reduce heat.
Make dumplings according to box directions and place in bubbling liquid by the spoonful. Cover and cook for 10 minutes. Remove cover and cook an additional 10 minutes. Let stew sit for 30 minutes before serving it.

Making a beef stroganoff would work perfectly with stew meat. Let me explain how I like to prepare the meat for the stroganoff ...........I like to make pot roast using some beef broth, coffee, Worcestershire sauce, soy sauce, Italian herbs, sliced garlic, sea salt and cracked black pepper. With this liquid concoction I cook my roast in a crock pot for 6-10 hours. Once I pull the roast out I have a big giant pot of the juice the meat's been cooking in all day. I only need a little to make gravy so the rest goes in the fridge (for up to a week only)..........When I make beef stroganoff (like I am going to tonight) I take that same juice I used for the roast and use it as the juice for the stew meat. Stew meat can be kind of chewy and tough so I cook it for about 5 hours or so in a slow cooker. By cooking it in the juices that other roast cooked in, it really gives the stew meat a nice depth of flavor and it is nice and tender. Just whip up the rest of the stroganoff stuff (i.e. boil noodles, makes sauce) and add the meat in with the sauce. You can even take the juice after this second use and freeze it for a future use for even deeper flavor.
