I want to permanently change the style set to Word 2003. Is there some way of doing this?

well it's the same as any other microsoft...you just go to where it says style and pick whick one you like best....

I'm not in Word 2007 at this time, but have you tried Tools, Options - then check the various tabs?

That link will take you to an add in that will do the trick. Other than something like this, there is no easy way.
