Irish Potato Candy Recipe
1 tb Mashed potatoes
2 1/4 c Confectioners' sugar
1 12 oz jar peanut butter
Placed mashed potatoes in a mixer bowl. Add confectioners' sugar one cup at a time, beating well after each addition. Spread into greased 10 x 15 inch pan. Spread peanut butter over top. Roll as for a jelly roll. Cut into slices. Makes 16 pieces.
Here is a simple but delicious recipe for Christmas toffee.
INGREDIENTS:
1 cup pecans, chopped
3/4 cup packed brown sugar
1/2 cup margarine or butter
1/2 cup semisweet chocolate chips
PREPARATION:
Grease the bottom and sides of a 9 x 9 x 2 inch square pan with margarine. Spread pecans in the pan. Heat the brown sugar and margarine to boiling, stirring constantly. Boil 7 minutes, stirring constantly. Pour and spread evenly over pecans, sprinkle with chocolae chips.
Cover pan with a cookie sheet; after about 1 minute, spread the softened chocolate chips over candy. Cut into squares while warm. Refrigerate until firm.

ok i think you should make mince meat(you not really meat, but fruit) pies as they are really christmassy and so good heated with some pouring cream. its quite simple, big jars of mince meat can be bought around christmas time in all supermarket, get some of this and also you can buy premade puff pastry which i think is nicest!
roll out the pasty and cut usins a 3-inch scone cutter, have two pices cut for every one mince pie.
then one of the two pieces and and cut a hole in the centre of it with a 1 inch scone cutter and put the small bit to the side for later use.
then put some milk and one egg(this amount depends on how many pies you are making) and beat it, then brush the liquid over the pastry.
then put the two pieces of pastry on top of each other and seal at the edges.
put your fingers gently through the whole in the top to open up the cas, and fill with mince meat. Reapeat for all pies!
thenbring back the small cut out pices, brush them with the milk and egg liquid and place on top of the pies where the hole is, sprinkle with ugar and pop in the oven at about gas mark four and cook untill golden and the pastry has puffed!
i made these when i was 14 they are great and may sound a little hard but are really very simple, i made these type withouy even using a recipe book!you can also make your own pastry is you want, a recipe for basic puff pastry should be easy to find on the internet!

How about fudge? Everyone loves that.
Or how about buckeyes? They are peanut butter balls dipped in chocolate.
It depends on how into cooking you are....but you could try making peanut or coconut brittle...it is a little dangerous, because the hot sugar can cause terrible burns if you aren't careful.
When I was a teenager (I was into cooking at age 8), I made pretzel sticks dipped in caramel and then in chocolate, and gave them to friends in tall canisters. Those were really really easy.
You could always make some christmas cookies too.
I'd skip the strawberries. They aren't in season in december, and are more of a valentines day gift.
That is nice of you to think of your friends like that.

Christmas Crispies
Ingredients:
1- 6 oz. pkg. semi sweet butterscotch pieces
1/2 c. peanut butter
5 cups of Rice Crispie cereal ( i use a generic brand)
Stir the 6 oz. pkg of butterscotch bits and the peanut butter in a pan, over low heat, until the butterscotch melts. Then pour mixture over the cereal and stir together gently. Drop by teaspoons onto wax paper. Chill for two hours or over night.

Peppermint Brittle
2 pounds white chocolate
30 small peppermint candy canes
Line a large jellyroll pan with heavy-duty foil. Place white chocolate in a microwave-safe bowl. Heat in microwave on medium setting for 5 to 6 minutes. Stir occasionally, until chocolate is melted and smooth. Place candy canes in a plastic bag, or between two pieces of waxed paper. Using a mallet or rolling pin, break the candy canes into chunks . Stir peppermint into melted white chocolate. Spread evenly in pan, and chill until set, about 1 hour. Break into pieces by slamming pan on counter.
Favorite Old Fashioned Gingerbread
1/2 cup white sugar
1/2 cup butter
1 egg
1 cup molasses
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 cup hot water
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses. In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan. Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.
PB FUDGE
2 cups semisweet chocolate chips
1/2 cup butter
2 cups crunchy peanut butter
Line a 9 X13 inch pan with foil. Set aside.
In the top pot of a double boiler set, slowly melt chocolate pieces and butter until smooth. Add peanut butter and stir until well mixed.
Pour chocolate mixture into pan; cover and chill in refrigerator until hardened. Cut into small squares and serve

If your already dipping strawberries, try other food items. Like pretzels, ruffle chips, apricots, "plums", etc. Even cookies you buy at the store. Or how about candy canes? Experiment and have fun with it!!

You could do a fruit plate, using fruit that will make a pretty pattern on your plate. And to serve with the fruit, you could make fruit dip which is made with 4 oz cream cheese, a 7 oz jar of marshmallow cream and 1 tsp vanilla. Mix it all together and put it in a pretty small bowl to go in the center or on the side of your fruit plate. You could make the fruit in the shape of a Christmas Ball or tree on a pizza pan lined with foil. Or you could make it in the shape of a star with the cantaloupe being the star and other fruit around the star shape.
If you have a cooking store near you, they sell something called Le Canape Maker. It comes with 4 plastic shapes that look kind of like syringes but no needles. The open ends are in different shapes like diamond, oval, circle and 5-sided. What you can do with them is take slices of white bread and whole wheat bread, crusts removed. Also take deli ham slices, sliced cheeses (whatever flavors you like but at least one yellow/orange and one white). You can use bologna too if you want. Anyway, press one of the devices down on a slice of bread, then on a piece of meat, then on a piece of cheese, then on the bread again, going around until you've filled the "syringe" with the layers, ending with bread. Then you poke a toothpick through the open end all the way to the back, press the syringe and you have an appetizer, muliti-layered, on a toothpick. Put them on a tray lined with foil, put a piece of moist paper towel over it and cover and seal with foil and put in the refrigerator. When you are ready to serve it (you can make them the day before but better in the morning of the day you want to serve them), take a red cabbage and poke all the toothpicks with the appetizers on them around the cabbage to totally cover it - will look like a big porcupine. Kids love them and they are pretty.
If you don't want to buy that device or can't find it, then you can take the two kinds of breads, remove the crusts, spread a mixture of cream cheese and crushed pineapple on it, place a thin layer of deli meat (like ham) on it and a thin piece of lettuce. Roll it up, stick toothpicks through it the short way and cut between the toothpicks so you have spirals on the toothpick. Again cover with damp paper towel and seal in aluminum foil and refrigerate. My grandmother would ask the bakery to color the bread for her - a loaf red and a loaf green. If you can't get colored loaves, the white bread and whole wheat will give you at least the different colors.
