I have a meatloaf recipe that calls for a pound of ground beef. After you have mixed in all ingredients, you seperate the meat into four miniature loaves. Then, you cook them at 400 F. for a total of 18 minutes. My mom insists this is too little of a time and that all the meatloaves she has ever mad she cooked for an hour or more. I tried to say that since the meat is in four smaller pieces it cooks faster. Who's right??!

You are right, the smaller portions would cook faster. Your mom is just trying to keep you safe.
Explain that it is like trying to cook a large cake vs a pan of muffins. The smaller size just takes less time since the heat is all around it.

Smaller pieces of anything cook faster but 18 minutes will give your little loaves a nice cooked crust but the inside may NOT be done *170 is done or 165 and let it sit for a few minutes*. Your mom most likely cooked her meatloaf in a single loaf so that's where you are getting confused. Just make sure that for it to be done, meat loaf should register 170F on a meat thermometer inserted into the center.

You are right - since the loaves are smaller - only 4 oz. each - it will take less time to cook them @ 400 degrees F.

If you cook them for an hour, they will be burned & dry.

However, since the loaves are thick, 18 minutes doesn't seem quite right unless the oven is completely pre-heated. Even then, I'd probably turn the oven off after 18 minutes & leave them to cook for another 5 -10 minutes in the residual heat.

The internal temp. should be 160 degrees F according to this chart: http://www.tyson.com/Recipes/Learning/CookingServingMeat.aspx

The smaller loaves will cook faster but I think 18 minutes is too short, when I am cooking mini loaves I cook them for half an hour

I would cook them at 350 for about 30 minutes depending just how small they are. Check them after 20 minutes and see how they are doing even if you have to poke into one. Personally I think 400 is too hot. The outside would be too brown I think. You could always stick them under the broiler for a minute or so to brown them up after they are cooked.

I believe chop meat or beef is 15 min per pound. So you are right.
Oh if I had to go thru the trouble of making mini ones, I would do hamburgers.. Meatloaf is usually one big thing that cooks for 1-2 hrs, then momma is right

you're def right, a BIG meatloaf (1 lb meat kept in ONE shape) cooks for an hour or more, but smaller ones will be destroyed if you do that!!! Go with your instinct (and the directions, haha)

let her taste your meatloaf and then she will see that you are right on how you are doing it.
