Pastas and rices are quick and nutritious. Not too difficult either.
Rest would depend on what you have on hand, and what your (or her) cooking skills are like. Why not a piece of meat (chicken, steak?) grilled and a nice salad on the side?

LOL. Sweetie, ask her to make you're favorite food. Or if you want to get romantic, both of you settle on a few simple dishes (mixed veggies, rice and baked chicken breast) and it'll be a meal you never forget!
The real question is, can she actually COOK? :) Nothing like burnt food to test how strong your feelings are for one another. LOL
