CRANBERRY-ORANGE STUFFED PORK CHOPS
6-8 Loin Pork Chops, 1-1/2 in. thick
5 oz. Swiss almond cheese spread or Swiss cheese spread
1/2 c. ricotta cheese
1 egg
1/2 tsp. allspice
2 tsp. minced garlic
1 c. fresh spinach, chopped
1/2 c. mandarin orange slices, chopped
1/2 cup dried cranberries
Preheat oven to 350 F. Spray a 9x13 inch baking dish with nonstick spray. Slice through thickest part of the chop, going in as far as possible without tearing, and make a pocket in each chop. Mix all stuffing ingredients in bowl and blend well. Place as much stuffing as you can get into each pocket. Place filled chops in the baking dish. Bake uncovered in oven for 30 minutes or until juices run clear. Arrange chops on a platter and garnish with chopped parsley and a few extra dried cranberries. Serve with sweet potatoes baked in the oven seasoned with rosemary and drizzled with honey.

YUM i LOVE stuffed pork chops...i take a box of stuffing unprepared and a can of apple pie filling and mix together and stuff...drizzle w/ either honey or syrup over top of the chop....AWESOME and easy

Oh my blue-eyes99, i'm soooo sorry for you cause you are missing one outstanding meal. The chops are baked instead of being fried.
You can use almost any combination of breads and seasonings, with optional fruits - dried or fresh.
Cornbread Stuffing (uses regular bread too) with jalapenos.
---- or mix in some browned crumbled country sausage.
---- or both
Bread stuffing with dried cranberries and dried apple (schnitz)
All dried fruit - chopped dried plums, apricots, apples with nutmeat of choice (optional) - a little onion for flavor
Classic Pennsy Dutch stuffing - stale bread, egg and milk to moisten, salt, pepper, parsley and onion for flavor.
Sage Stuffing - sage is as good with pork as it is with poultry. Just add sage to the Classic Pennsy Dutch stuffing.
Classic Cornbread Stuffing - follow Classic Pennsy Dutch stuffing but use half crumbled cornbread with the stale whiel/light bread.
Wild rice stuffing - Mix equal poritions of cooked white rice (leftover from chinese takeaway??) and cooked wild rice, moisten with chicken stock, add flavoring of choice - onion, celery, herbs, etc.

Boudain and cajun seasoning to season your Pork chop it's really good :)
