Hawaiian Style Chicken
INGREDIENTS:
"1-3# cut up ready to cook fryer
1/4 cup melted butter
1/4 cup brown sugar
2 Tab. cornstarch
1 tsp salt
2 Tab chili sauce
1 tsp soy sauce
1/4 cup vinegar
1/2 tsp Worcestershire sauce
1/3 cup ketchup
INSTRUCTIONS:
In a shallow roasting pan, roll chicken in melted butter until well coated. Arrange pieces, skin side up, in a single layer in pan. Reserve 2 slices of pineapple for garnishing & dice the remaining. Mix the pinapple juice with the remaining ingredients. Add drained pinapple pieces. Spoon half over chicken. Cover and bake 350 degrees for 1/2 hour. Uncover & bake for 30-45 min. or longer till chicken is tender. Baste chicken occ. with sauce as it cooks. When done twist the two slices of pinapple (cut into) and place on chicken and serve.

Sweet and Sour Sauce
Yields about 1/2 cup
INGREDIENTS:
1/3 cup white or rice vinegar
4 TB brown sugar
1 TB ketchup
1 tsp soy sauce
2 teaspoons cornstarch mixed with 4 teaspoons water *cold*
PREPARATION:
Mix the vinegar, brown sugar, ketchup, and soy sauce together and bring to a boil in a small pot. Mix together the cornstarch and water, add to the other ingredients and stir to thicken.
(If desired, you can add 1 green pepper, cut into chunks, and pineapple chunks as desired after adding the cornstarch.
That would be the basic recipe..you can use this sauce for chicken *including the vegetables and pineapple chunks, drained*and pork and as a dipping sauce for egg rolls. I've tried this and it's delicious

SWEET AND SOUR SAUCE

1/4 c. pineapple juice
2 tsp. soy sauce
1/4 c. water
Combine ingredients in a small saucepan and bring to a boil. Simmer gently 5 minutes, remove from heat. Serve immediately or store in refrigerator and serve cold.
I add marsarino cheeries, and chunked pineapple. My ex liked green peppers in his, I hate them so now divorced I make it my way, which is much tastier now lol. enjoy. Add some cherry juice or food coloring to make it red.

This is what we do.
3 boneless chicken breast
2 green pepper chunked
2 onion chunked
2 tomato's chunked
1 large can pineapple chunks drained
1 bottle sweet and sour sauce
4 cups cooked rice
cut up chicken add peppers and onions cook until tender, add pineapple and tomato's simmer for 20 minutes. add sauce, serve over rice

PINEAPPLE CHINESE SALAD
1 (20 oz.) can pineapple tidbits in natural juices, drained
1 (8 oz.) can sliced water chestnuts, drained
3 c. shredded chicken
1 c. chopped celery
1/2 c. shredded carrots
1/2 c. salted dry roasted peanuts
1/3 c. sliced green onions
1 c. chow mein noodles
SESAME DRESSING:
1/4 c. peanut oil (can use salad oil)
1/4 c. plus 1 tbsp. white vinegar
2 tbsp. brown sugar
2 tbsp. toasted sesame seeds
1/4 tsp. crushed red pepper
Combine pineapple, water chestnuts, chicken, celery, carrots, peanuts and onions. Toss with Sesame Dressing, then chow mein noodles. Makes 6 servings.
To prepare dressing, combine all ingredients.
