some vets wear just scrubs, some wear scrubs with a lab coat, and some just wear slacks and a collared shirt.

Most wear scrubs, like medical doctors. At the very least, they were a lab jacket. It's usually a very informal dress code, as they are dealing with the potential for messy situations.

some wear scrubs, or scrubs with a lab coat, or regular clothes with a lab coat. some want to look more professional and wear professional dress with a lab coat, like a regular doctor.
if you are shadowing, wear scrubs, because you will most likely get the dirty work.

I would definitely not wear 'jeans and a t-shirt' on the first day as you need to make a good impression/be professional. Scrubs, dress pants and casual shirt all good options. Clean, unstained, not tight, not crazy fashionable and young looking.

Every vet I've been to wears a white lab coat over street clothes. The vet techs tend to wear scrubs.

Where ever you are going to be doing the job shadowing I would call and ask them what their dress code is. Simple, easy, and you'll fit right in with everyone. Have fun.

A definite "must wear" are closed-toed shoes (no sandals or flip-flops), probably with rubber soles would be best.
My vet and his assistants all wear scrubs in the clinic, don't know if that's standard everywhere.

Khakis and button front shirts are fine. Wear comfy shoes. Make sure your lab coat is well pressed. That makes a nice impression.

THAT ALL DEPENDS ON THE TYPE OF VET YOUR SHADOWING. IF YOUR GOING TO BE WITH AN IN OFFICE VET WHO TAKES CARE OF DOGS AND CATS THEN I WOULD SAY WHAT YOU WEAR EVERYDAY, BUT IF YOUR GOING TO BE SHADOWING A VET WHO WORKS WITH FARM ANIMALS I WOULD WEAR JEAN A T-SHIRT BOOTS IF POSSIBLE. MOST VET TECHS WEAR SCRUBS TO WORK BECAUSE THEY DRY REALLY EASY WHEN WET AND FOR THE FACT NO ONE WANTS TO RUIN A GOOD OUTFIT.

Mine usually wears jeans or khaki pants and a scrub top. I wouldn't go too casual though.
