One of my favorites that I make alot is a recipe that came with a 3 1/2 qt. crock pot I bought--this is the basic, but I always add a parsnip and green beans, and add more carrots, celery, and canned diced tomatoes, until the ingredients are about an inch from the top of the pot:

Beef Vegetable Soup:

1 lb. appr. 1 inch cubed beef stew meat (or a little more if fits)
2 carrots, sliced (I double)
2 stalks celery, sliced (I double)
1 can diced tomatoes with juice (calls for smaller can, I get lg. one & add more)
1 russet potato-peeled and cubed (appr 1/2" cubes)
1 tbs. dried parsley ( add a bit more)
1/2 tsp. dried thyme (don't over-do this)
1 md. onion, coursely chopped
1 tsp. salt
1/2 tsp. pepper
1 cup water
(Not in original recipe, but I like to add a lg. or 2 sm. parsnips-great in soup!, and some fresh or frozen green beans)

Combine everything in crock pot and cook according to directions--usually 5 hrs. on high or 10 on low

Carmelized Pork Carnitas

1½ lbs boneless pork butt or shoulder
2 tbs brown sugar, packed
1 tbs tequila (optional)
1 tbs molasses
½ tsp salt
¼ tsp pepper
½ tsp cumin
2 cloves garlic, finely chopped
1/3 cup water

Cut pork in 1 inch cubes. Place in crock-pot and top with all other ingredients. Cook on low for 8-10 hours. Remove with slotted spoon and place on cookie sheet and broil until slightly brown on top. Serves about 10. Serve with corn tortillas and pico de gallo or salsa.

Roast

Put a pot roast or oven roast in your crock pot. Add a can of cream of mushroom soup, a packet of Lipton onion soup mix, a can or 2 of water. Cook on high for about 8-10 hours or until tender (fork goes in easy and meat separates). Can be eaten as is or put on french rolls for beef dip sandwiches w/ Au Jus sauce (package) for dipping.

BBQ beef sandwiches

Same as above recipe except add a bottle of BBQ sauce in place of the the soups and water. Serve on french rolls.

Heavenly Ham Casserole

6 med potatoes, sliced thin
1 med. onion chopped
1 lb. ham, cubed
1 cup cheese, shredded (cheddar)
1 can cream of mushroom soup
Paprika

Put 1/2 potatoes, then 1/2 onion, then 1/2 ham and cheese, repeat with rest of potatoes/onions/ham/cheese.

Spread soup over top so air doesn't get to potatoes if possible. Sprinkle with paprika.

Cook on low for 8-10 hours.

Best-ever Beef Stew

1 large onion, halved and thinly sliced
2 medium carrots, peeled and thinly sliced
2 large potatoes, cut into 1/2-inch chunks
1 to 1 1/2 cups peeled and diced rutabaga (about 1/2 small rutabaga)
1 cup fresh green beans, in bite-size pieces
1 pound beef stew-meat chunks
1 bay leaf
1/2 teaspoon dried thyme
1 clove garlic, crushed
3 cups low-sodium beef stock
2 tablespoons light brown sugar
3/4 teaspoon salt
2 teaspoons Worcestershire sauce
Pepper to taste
3 tablespoons all-purpose flour
2 teaspoons tomato paste

Step 1
Put everything but the flour and the tomato paste in a slow cooker; stir to combine.

Step 2
Cover and cook on the low setting for 8 to 9 hours or on high for 4 to 5, until the beef is tender and the potatoes are just fork tender.

Step 3
Stir the stew once or twice as it cooks, if possible. About 30 minutes before serving, transfer a ladleful of the broth to a small mixing bowl.

Step 4
Add the flour and tomato paste and whisk until smooth. Stir the mixture into the stew and cook for the remaining half hour. Makes 6 to 8 servings.

put a pork loin and about a half a can of beer in the crock pot and cook it on low for about 8 hours - it's done when the meat pulls apart easily with a fork. add bbq sauce and serve it on a bun!

Since you are new at cooking I'm going to let you in on a secret.

EVERYTHING turns out great in a crock pot--don't really stress recipes.

You can take any meat and any sauce and cook it in there and it comes out great . ( chicken and tomato sauce, pork and barbeque sauce) You can brown a roast and put it in there with veggies and a little water and it would turn out great.

Cook your spaghetti sauce or chili in there, too!!
