My mom used to make chili when I was growing up and I really liked it. We always used to fry tortillas and use those to dip in the chili. I know how to fry the tortillas but I have not been able to find a really good chili recipe. Can anyone help me out with an awesome recipe for chili.

Very Easy Chili
1 lb. ground sirloin or lean ground beef
1 regular can Bush's brand mild chili beans
1 regular can Bush's brand hot chili beans
1 can Rotel brand diced tomatoes with green chilies
1 small can (6 oz.) tomato paste
1/4 cup catsup
2 cups water
1/2 tsp. crushed red pepper
1/4 tsp. paprika
3 chopped cloves garlic
1 cup shredded cheddar cheese, divided in two portions
Cook meat in skillet just so it is no longer pink. Drain. Add meat and all other ingredients, except the 1/2 cup of cheese, to either a crock pot or a kettle. In crock pot, this can cook all day on low or 2 hours on high. In kettle, cook about 1 hour on low heat, stirring occasionally. Use remaining cheese to sprinkle on top of individual chili bowls.

Brown 1 lb of lean ground in a pot on the stove, add finely chopped onions and green peppers. Add salt and pepper. Generously cover the whole surface of the ingredients with chili powder. Let simmer and boil down a little. Add 1 can of tomato sauce, 1 can of crushed tomatoes, and 1 can of diced tomatoes. Simmer for 10 minutes. Taste for chili taste..if you want more taste, cover generously again with the chili powder. Add 1 or 2 cans of red kidney beans to mix. Simmer for a couple of hours until the flavors mix, testing her and there for your own taste of chili powder and add as necessary. This is a restaurant recipe and a huge seller. Good luck.

Texas Chili Recipe

INGREDIENTS:
3 pounds lean beef, coarsely ground or cut in small cubes
1/4 cup chopped onion
3 tablespoons vegetable oil
6 cups water
2 bay leaves
1/4 cup chili powder
1 tablespoon salt
8 to 10 cloves garlic, minced
1/2 teaspoon ground cumin
1 teaspoon oregano leaves, crushed
1/2 teaspoon ground cayenne pepper
1/4 teaspoon black pepper
1 tablespoon sugar
3 tablespoons sweet Hungarian paprika
3 tablespoons flour
6 tablespoons cornmeal
cold water

PREPARATION:
In a 6-quart saucepan, sear beef with onion in vegetable oil until beef is no longer pink. Add water, bay leaves, chili powder, salt, garlic, cumin, oregano, cayenne pepper, black pepper, sugar, and paprika. Simmer, covered, 2 hours. Cool. Refrigerate overnight so flavors will mellow. Skim off the solidified fat. Reheat. Combine flour and cornmeal; add a little cold water to make a smooth paste-like mixture. Add paste mixture to chili. Cook, stirring, for about 6 to 8 minutes longer. Remove bay leaves before serving.
Serves 6.
