YEARS ago -- shees, I'm getting old!!! -- I used to make an omelette with apples and vanilla sugar. Used to do it out of my head. I thought of it the other day and was wondering: do any of you have an omelette recipe for apples that you use? Gosh, I remember it was REALLY good!

No, but it sure reminds me of my favorite French toast recipe.

Make a batter of 3 eggs a little sugar and lots of cinnamon.
Dip bread in egg mixture and brown on lightly greased grill.

Top with apple pie filling.... In a hurry used the canned kind.

If you make your own... start and finish it before making the toast.
Soak 2 Tablespoons of tapioca in 1/2 cup water in a sauce pan.
Slice and core 2 or 3 apples... Do not peel.
Add apple slices and 1/4 cup of maple syrup. Simmer until tender. Can be served hot or cold or in betwixt...
