I'm embarrassed to ask but what veggies are considered dark leafy greens? Spinach? Collards? Any kind of lettace considered dark leafy green?

Nothing to be embarrassed about. Stay away from iceberg. Spinach, Romaine, Collards (I've never tried that.) You want something dark. Look at the iceberg; you can see how light it is.
Make a big salad. We like Romaine, tomatoes, cucumbers, celery, raisins, and spaghettli noodles!! Add mayo and some ketchup (not too much) and mix it all up together. Yummy! Some healthy bread (not white) and butter, and you've got a meal! There are no rules. Add hard-boiled eggs, tuna, chicken, whatever you like!! Bon Appetit! :)

Yes, spinach and collards are both dark and leafy greens. Most lettuce with the exception of iceburg probably would be.
