What about a pasta salad. It coveres most food groups.
Spiral noodles, italain dressing, olives, salami, marinated artichokes, carrots, sundried tomatoes. The combo is endless. Plus, its a cold dish and it tastes better the longer it sits. Make plenty and have left overs for lunches or snacks.

ask your grandmother if she remembers "homemade noodles" from when she was a child. my grammy made them on holidays and it's been a tradition passed down to us.
here's how she taught me:
boil raw chicken pieces with enough chicken broth to cover, along with chopped onions and some parsley, salt and pepper...until chicken is done (not red in center) and falls off the bone. remove chicken and take off skin and seperate into bite-sized pieces.
set aside, saving broth.
in mixing bowl.....4 eggs (beaten)...add salt (just 1tsp).
then add slowly flour and stir until it forms a ball that isn't real sticky. put dough onto floured surface and sprinkle flour on top...flour your rolling pin and roll out thinly.
here's the tricky part: once rolled out, cut the dough into thin strips with a pizza cutter, careful not to let them stick together (can do this by tossing them in flour).
bring the broth back up to a boil and slowly drop noodles a few at a time into it...stirring to coat each noodle with liquid.
it's important to keep stirring the whole time. once all noodles are added...put back in the deboned and deskinned chicken pieces and cook approx 15 min. taste to ensure doneness and season with more salt/pepper to your liking.
this is good as a sidedish if thicker or a soup if you want it thinner.

She can do a mega mix, with this I mean she can cook 1-2 simple foods and have a meal, kind of fast food, e.g. she can cook fried potatoes with fried chicken and everyone will love it!!!

Maybe you could pick out a cookbook you like and you could look at it together and maybe cook together, too. It's fun and then you'd both have some input . . . and if the recipes are not all super simple, then at least it's some time you have together.

ummm..how about some hamburger helper>? she can use ground beef or turkey and there are SO many different kinds to choose from.......MMMMMMMMmmmmmmmmmMMMMMMMMM tasty and easy to make!! or how about Crock Pot Classics....does she have a crock pot or slow cooker? if so go to the frozen section at the grocery store and get one of those...throw the contents of the bag in the crock pot and wait a few hours...BAM dinner is served....hehehehe good luck!
