My boyfriend also works outside in construction and he takes many different foods to work. As long as you have plastic containers, a lunch bag, and a cold pack, he can take anything he would normally eat at home. If he prefers to eat the food hot, then he could stop by a convenient store and use the microwave, they all have one for the cold foods they sell. I have sent everything from fried chicken to burritos and even spaghetti. Hope this helps.

Because he is a construction worker you can alternate with soups containing a lots of meat chunks or chicken chunks, or a good soup with a cream base of onions or mushrooms or sparragus that contains a lots of proteins and vitamins he needs for his job (You can also add as accompainment to his soup bread croutons or slices of spiced bread or just white bread or black bread). Besides the soup you can give him a side dish of rice or to alternate the main dish try chilli beans and also those meat or pepperoni sticks also salads works perfectly. As beverage you can give him a pitcher of water or cool aid or hawaiian punch or try giving him a plenty of Gatorade bottles and also if he likes coffee try to give him a termal pitcher of coffee. You can also try giving him a good portion of M&M's, Skittles, chocolate candies and hard candies as well (Why candies? because candies have the needed amount of carbohidrates to give plenty of energy in that kind of job), and if you want for dessert you can add to his lunch box those key lime pie puddings or the chocolate puddings too, or a slice of his favorite cake or pie also you can try with cookies snacks.
Also a good idea if in the construction area when lunch time arrives if he can get access to a microwave try those fast microwable lunch meals that contains a main dish of meat or chicken a side dish of mashed potatoes or rice and also a side dish of vegetables, or try those microwable soups or those pizzas that needs only microwave on the run.
The key is to alternate all this kinds of food in a different order and in different days so your husband will always get a different but balanced meal everyday adjusted to his needs and if you want to see it this way, for him it will be a surprise lunch every day and I am 100% that he will be more than glad.
So give sandwiches a recess and ocassionaly you can add a sandwich to his lunch but in that moment your husband lunch will have various alternatives and maybe that sandwich will be eaten on his way back home!
So go ahead, try this alternatives and not only your husband will be glad with the results also you will get the rewards of it!
So Good Luck and hope this answer solves your lunch doubt in the best way possible!!
See ya and have a lunchfull day!!

Get him a Thermos that is made for soup. The top is used for the soup bowl. There all kinds of containers for food available now, for a piece of pie, finger foods, etc. Get him a lunch bucket that is insulated also. Soup is especially good when the weather is cold.

You can get a thermos for hot foods and put soups, stews etc that you heat in the morning for him and put in his thermos. Fried chicken is another you could fix and he could eat cold. Pork Chops are another good one to send cold.
If your husband likes salads you can add meat to the salad to make a chef salad.

I would say, hot bowl of soup(not the fatty one), it will keep his blood flowing smoothly, would make him less sleepy after eating the sandwich and would keep him more active. Don't drink too much water or juice during lunch as it would fill his stomach more filled and slow digestion process would make him tired. After couple of hours, he may like to eat some fruit.

I pack salads with strips of chicken or steak on top. You just have to be sure everything is cut up small enough, unless you want to pack a steak knife.
He really enjoys the salads though, I put everything I can in olives, cukes, onion, garbanzo beans. He says they fill him up without making him tired after he eats.
