I made a pot of ribs for dinner. I forgot to put it away til about 2:30 this morning. The pot was covered.
It should still be safe right?

If they sat out for more than 4 hours unrefrigerated (which it sounds like they did), then you should trash them.

You could still get sick after reheating them.

It's up to you. Honestly, I'd probably eat them depending on the color and smell. If they have browned a lot probably not. "I would go by the "use by" date on the package. The USDA recommends that fresh pork be kept in the refrigerator no longer than 3 to 5 days before it's cooked or frozen. However, much of the pork you'll find at the stores has been "enhanced" with a preservative, similar to a brine, which extends the shelf life quite a bit. Just go by the label and you should be fine."

Ray, do not eat those ribs..............

Bacteria start to multiply when food cools into the danger zone between 40 and 140 degrees Fahrenheit."
... throw away cold food that has been out for two or more hours. And if outside temperatures rise to over 90 degrees, only keep the food out for one hour.

I would suggest making sure you re-heat them up really good. But I'm guessing they'll be alright.
