TURKEY.
Everyone uses beef. I think the flavor of turkey and the tenderness of it compared to beef is a complement to mushy vegetables and juicy beans!
Here is my favorite chili recipe. It is how I make it in my restaurant. Please let me know if you need any other ideas... I do make beef chili as well... and I have some good recipes for that also.
By the way - when I make beef chili - I always add a dollop of sour cream because it helps the meat to stay congealed and less soup-like. :o)
Here is my favorite recipe:
TURKEY CHILI:
Vegetable oil, about 2 tablespoons
2 pounds lean ground turkey or half lean ground beef and half lean ground turkey
1 large green bell pepper, chopped
1 cup chopped onion
1/4 teaspoon garlic powder
salt and pepper to taste
1 large can (28 ounces) tomatoes in puree
1 1/2 cups tomato sauce
1 or 2 cans (15 ounces each) kidney beans, drained and rinsed
1/4 cup of beer or broth
2 to 4 tablespoons of honey or brown sugar, or to taste
2 envelopes commercial chili mix (for 2 pounds meat)
dash of cayenne pepper, to taste
shredded Monterey Jack cheese, or mild Cheddar cheese
PREPARATION:
Heat oil in a large kettle or Dutch oven. Brown ground turkey. Add remaining ingredients and simmer for 1 1/2 hours or more. Can also be cooked in the crock pot, after the ground turkey has been browned.
Top with grated cheese (Mozzarella, cheddar, or Monterrey Jack), sour cream, oyster crackers, chopped onions, taco chips, etc.

I use turkey meat instead of beef. I have been substituting turkey for a lot of things. My chili recipe is the easiest and I have gotten a lot of compliments. I usually eat my chili with tortilla chips, and top it with sour cream and shredded american cheese.
I love it. I will make some as soon is the cool fall weather hits. It's still really warm out.

Honestly...a can of beer, no kidding, along with some other spices of course. Such as chili powder, garlic salt, pepper, green peppers, fresh garlic, cilantro, onions, put the kitchen sink in it....lol (not really) :) but do use the other ingredients that I was talking about.

Coco+ Cinnamon- not enough to I.D , just to deepen the flavor. Also ; don't add your peppers or spices until you can keep your heat low as the essential oils are removed by the steam,

Pork hocks. Sounds gross but as they cook and break down it adds an amazing rich flavor when you let it stew in there.

Instead of tomato juice or sauce, I use a bottle of spicy bloody mary mix. And a beer.

I use ground turkey instead of beef & I use frozen corn kernels instead of kidney beans. It's outstanding!

I use sliced spicey sausages along with cubed pork...and a couple of bottles of beer. One for me and one for the sauce.;-)
