Depending on your budget. I like Langham hotel, Mongkok. It is located next to a big shopping center with shops, restaurants, and movie theater. Around the hotel, there are many shops and markets. The hotel lobby has a bridge connection to the shopping center. Additionally, it is very near to the HK metro. The hotel is fairly new and the rooms are clean. I've stayed there many times. The average room rate is about USD$125.
I also like to stay at the YMCA Salisbury hotel located near to the Star Ferry Terminal. It has great view and easy transportation access. The hotel is located in Tsim Sha Tsui on Nathan road. Lots of shopping. I like that hotel too and the average room rate is about $80.00 to $100. Depending on the season, I've stayed there for about $70. Book early at this hotel. These two hotels are on the Kowloon peninsula.
If you want to stay on the HK island, there are a few options but more expensive. Try the hotel near North Point, Harbour Plaza. I really like that hotel. It is clean and quite. I personally also like the Shangri-La, Sheraton, and Mandarin. check them out online.

By the way, I hope you're not going during the HK Electronics show around October 13th to 17th, I think. Hotel rooms are all booked up and quite a lot more expensive.

Depending on your budget, you will have a lot of choices. I usually stay at one of the 4 or 5 Metropark hotels, I like the one in Mongkok and it is usually quite affordable in the business hotel category. I would say they are comparable to Delta hotels in Canada. When I am not on business, I stay at one of the hostels, or at the Tatami Hampton off Nathan street (minuscule rooms but great location).

If you on a budget, then try the hostel in HK. They are way cheaper.
