They will be fine for that period of time. Just feed normally right before you leave, then again when you return. Don't give "extra" to make up for the missed meals.
This is a better solution than using automatic feeders or feeding blocks, both of which can add too much food (and in the case of the feeder block, unwanted chemicals), leaving you with a messy tank to clean when you get back, or worse, releasing too much ammonia when the extra food and fish wastes decompose and having your fish die.
The automatic feeders have their purpose though, and if you have an adjustable model and the time to work with it so it doesn't release too much food per feeding, these are good for extended trips.

Bettas can go a little while without food, but I'm pretty certain that 7-10 days is a little too long. If you go to wal-mart or petsmart, you can purchase an automatic fish feeder for about ten dollars. These are better than those stupid dissolving block deelies because they are reusable. Also, I don't recommend that you use this thing all of the time, you should feed your fish by hand when you can.

It it much better for you to leave your betta alone than to let someone without experience take care of them, they can survive 7-10 days without food. Just make sure you feed your betta once in the morning before the day of your trip and then in the afternoon or night replace as much as 30% of the water remove any debris you can find.

Your bettas will actually be better off if you don't feed them. Bettas, and most fish, can go up to a week without food, completely unharmed. They have different metabolic rates than we do which enables them to do this.
There are vacation feeders available, but these are usually overpriced and what's more, they don't work very often. They tend to foul up your water instead, and it's much less healthy for a betta to be sitting in dirty water for a week than it is to be in clean water but not eat for a week.
Just do a water change and feed the regular amount before you leave (don't overfeed before you go to compensate, it doesn't work that way and your betta will get constipated). He will be fine.

I have just the answers for you.
If you want to buy a feeder, there is one shaped like a treasure chest, and every other day it releases flakes and eventually bloodworms.
I travel a lot and my experience with bettas have been wonderful.
Pick up some frozen bloodworms, and put in a thumb sized chunk before you leave.
I am sure your fish will be fine.
There have been stories about bettas where they haven't eaten for upto like 4 weeks.

2. If you have a neighbor you trust you can get them to come over once a day and feed your betta however many pellets needed.

They should be okay. Just make sure you feed them before you leave. Do not feed extra hoping it will last. Or you could put some baby guppies in the tanks with them. 4-5 in each tank. Do not do this with brine shrimp as they die quickly in fresh water.

No. It will die. Thankfully bettas are easy to move. Give him to a friend or teenager in the neighborhood who will feed and love it for 5 bucks.
