i have 1GB (1x1GB) of 667mhz DDR2 ram running at 533Mhz in my motherboard. i also have another 512MB (2x256) of 400Mhz ram from my old motherboard.

would i get best gaming performance using just the 1GB at 533mhz or would i be better of using all my ram (1.5GB) running at 400mhz?

Stick with the 1 Gb for now, unless you have some performance issues with your PC.
Are you certain the 2x256 is actually DDR2 as well? I know there is some 400 Mhz DDR2, but DDR is more common for memory running at 400 Mhz. So check that first, before you put any memory anywhere :)

If your 2x256mb 400mhz RAM came from an OLD motherboard, those could be ddr-400 (184 pins). They are NOT compatible with your ddr2 slots for 240 pin modules. Stick to your current RAM. It should be fine with Win XP. Once you move to Vista, you could consider installing another 1Gb stick.
