It depends on what the essay is asking for. You could use examples of things that are blue if it's about what blue actually looks like. It's a sky on a sunny Summer's day, it's the petals of forget-me-not flowers etc. If it's asking about how blue makes you feel (example: calm, uplifted), you can think of the colour blue and describe what it makes you feel and what it makes you think of.
