It is the thickness. There are 2.54 centimeters per inch so a 3 cm thickness is about 1-1/8". 2cm is about 3/4" thick.

Most people use 3 cms for counter tops. It looks the best and is a bit stronger than the 2 cm stuff.

It's the thickness...there is also a difference in price...1cm the cheapest and 3 cm the most expensive....3 cm looks best, but you can get away with 2 cm as long as there isn't going to be an overhang like for a bar. If this is the case, use 3 cm.

This has to do with the thickness of the stone slab. 3cm which translates to 1.18 inches.
