I have a 320amp meter base and will be running a 200amp service in my basement and a 100amp service in a detached garage. What is the best way to wire this, should I junction the wire coming into the main box and run a smaller wire to the garage or should I run both directly from the meter base?

If you install the feed to the 100-amp service in the garage from the 200-amp panel, then don't double lug off the panel. Install a 100-amp circuit breaker in the 200-amp panel and go from there. I would suggest even a 60-amp breaker if you don't think you'll need 100-amps because some loadcenters won't allow you to put in a 100-amp breaker unless it has a special slot at the bottom of the main lugs. If you do this, then your garage panel will not need a main circuit breaker per code.
If your meter has double barrel lugs, then you can do that also, but don't double lug from the meter either. If you have two feeds from the meter, then your garage panel will need a main circuit breaker per code.
By the way, double lugging means stuffing more than one set of wires into a lug barrel, which is not good practice. They make double barrel lugs for this reason.

You will need to check and see what your local authority having jurisdiction will approve. In my state, we commonly would run both services from the meter can, but we have to buy a meter enclosure with the double lugs. We are not allowed to install both wires in one lug. In this case, each service panel is considered a service, with the main bonding jumper installed in each panel, and each panel having it's own grounding electrode system. So give your local inspector or building department a call and ask them. Make sure to inform them these are two separate buildings.

William: You are thinking of volts. 240, and 480 in the USA. These are service sizes in amps. 100 200 320 and on up.

Now i comprehend you pick us to declare 60 metres, yet this is only too ordinary, so i will say as long as some cricketers could only like the pitch to be whilst Binga is bowling at them! LOL an option answer would desire to be,6,000 centimetres, or 60,000 millimetres.
