costume or masquerade balls are always fun. also a red white and blue dance where your clothes must have some of either color could be fun. maybe a historical dance, futuristic (lots of techno stuff and metallic decorations would be unique and not hard to do), or blast from the past where you have 80s music and crazy hairstyles.

try a theme where everyone dresses up in their own expectation of what fashion will be like in 20 years. it will certainly lend itself to creativity, and probably hasn't been done too many times before. hopefully it will raise some social consciousness in the process too. good luck!
