Learn how to fly helicopters. In my dreams I always know how...I figure me in an "alternate reality" does this and the knowledge is somehow leaking through.
Parachute to prove my fear of falling won't kill me.
Learn how to ski and snowboard...I have always loved winter and winter sports but never learned to ski. Snowboarding would be a bonus.
Rock climbing for the same reason I would want to do parachuting. My hands used to be very strong when I was younger. I taught my daughters how to climb trees using just fingers and toes jammed into the rough bark for leverage, so I think rock climbing would be possible.
Racing stock cars. (I have ALWAYS had the need for speed, and just love it.)
Deep sea diving...I mean really far down on the bottom of the ocean where you find those ugly long-toothed monstrosity of fishes. If they ever come up with the ability to "tailor" humans for different conditions I would want to be given gills for breathing and webs between my fingers and toes (and water impervious skin of course).

Buy my motorcycle back. I sold it a couple years ago and I guess I'm sorry. It was a Yamaha Virago, 1100 cc and I had it custom painted with a beautiful angel on the tank. I sold it because I was feeling rotten at the time and I wanted someone to get it out there and get some use out of it. Now, I've lost weight and I'm eating healthier. My energy level is through the roof and I feel like 40 again. I know who bought it but she loves it too much to let me buy it back.
OOO, I just noticed Southern Comfort's answer... I've done that and believe me, there's no better feeling. Try going through the "notches" in the mountains of Vermont. I rode all the way up to the Quebec border to visit friends.. Awesome!

I'd love to be physically strong enough to ride a motorcycle cross country for say a three month touring of our beautiful land. Sleeping under the stars except for every third night in a motel/hotel with baths and good meals. I'd like to ride winding mountainous roads, the flat lands of the south, canyons, mesas, swampland, not too much in the big cities though.

53, here! Ok..I am scared of heights and also depth perception..so that leaves parachuting and riding on a mule to the Grand Canyon's floor out. I am a bit older than the age limit allowed to try out for American Idol. As long as I do not have to wear a bikini..you do NOT want to see THAT!...I would love to spend an afternoon playing a wicked game of three on three beach volleyball and coming away with the greatest tan instead of fire-engine red sunburn!

I would be physically able to do most things, except I have severe allergies/sensitivities, esp to fragrance and it limits where I can go. I'd like to travel more, skydive and rock climb if I had the $ and right situation.

As of today I am able (physically and mentally) to do just about anything I want! It's finding the time to do awesome stuff like sky diving and snorkeling that I have a hard time with!

I wouldn't say you were mentally 'off' (in the latter comment you made about yourself)! I can't begin to imagine about the things I would miss if I weren't able to do them. I think I'd miss being able to do things day-to-day if I weren't physically or mentally able.
You never know what you've got till it's gone I guess!

I want to go on an Orca whale watch....hot air balloon ride....swim with dolphins and a nice long cross country trip to see everything I never got to see. I'm physically and mentally able to do it.....just not financially.

I miss being a gym rat. I hurt my shoulder last year, and my knees the year before that, so I'm kinda sidelined...it can be depressing to feel like your OOMPH is slipping away. Plus I've managed to gain weight from inactivity and giving up smoking, darnit!
