I love this question!
But it's hard to pick just one. I guess it would have to be Havarti.
If you *didn't* mean just one, I would like to add Colby-Jack, Parmesan, American, Mozzarella and Mild Cheddar.
And really, there are probably more that I can't think of right now. I reallly like cheese. :o)

I absolutely LOVE cheese, so it would have to be a type I don't like - blue cheese or wensleydale - otherwise I'd end up eating it and have no home left!! :))
