I think cooking chocolate is easier to melt and not as sweet as normal eating chocolate...

cooking chocolate has little to no sugar simply because most recipes call for added sugar. If it were sweetened chocolate, PLUS the additional sugar, not only would you get an undesirable outcome, but the taste would be completely NOT what you were expecting. Kinda like making a cherry pie from scratch, and using MARASCHINO cherries WITH the given amount of sugar in the recipe. Yeah . . . my mom did that once. She had NO CLUE the ways of American cooking!!!
