Macaroni cheese
Ingredients
250g/9oz macaroni
40g/1½oz butter
40g/1½ plain flour
600ml/1pint 1½fl oz milk
250g/9oz grated cheddar
50g/2oz grated Parmesan
Method
1. Cook the macaroni in a large saucepan of boiling salted water for 8-10 minutes; drain well and set aside.
2. Melt the butter over a medium heat in a saucepan slightly larger than that used for the macaroni. Add the flour and stir to form a roux, cooking for a few minutes.
3. Gradually whisk in the milk, a little at a time. Cook for 10-15 minutes to a thickened and smooth sauce.
4. Meanwhile, preheat the grill to hot.
5. Remove the sauce from the hob, add 175g/6oz of the cheese and stir until the cheese is well combined and melted.
6. Add the macaroni to the sauce and mix well. Transfer to a deep suitably-sized ovenproof dish.
7. Sprinkle over the remaining cheddar and the Parmesan and place the dish under the hot grill. Cook until the cheese is browned and bubbling. Serve straightaway.

Well....if you want a quick mac n' cheese....by the box stuff.....follow the directions like normal....adding the butter, milk and cheese sauce/powder.....however....
In a seperate pan.....make up taco seasoning. (no meat)...just do the taco seasoning in a pan like you would if you were making tacos...but don't put hamburger in to brown...just the water and taco seasoning.
Add additional spices to the taco seasoning as you make the mac n' cheese. (Garlic, Paprika, black pepper, and Oregano to taste) as well as putting in alittle chopped onion (about 1/8 cup to 1/4 cup most you will want), some black olives, (one small can sliced) and if you like it spicey....some jalepino's. Also you can add some Frito's Corn Chips into this as well and mix it in with everything else. Then add Shredded Chedder Cheese to the top, and back it in a baking dish for about 10 mins at 400.
Take it out, add Sour Cream to the top and serve.
Btw..on the frito's.....for every 2 boxes of mac n' cheese you use...1 of the 99 cent bags will be enough for it. (but no more than 3 bags if you are doing a large amount (6-10 boxes worth) of this stuff).
Ok, so it isn't a "soulful" mac n' cheese....but It's a damn good one.

Just normal ol' mac-n-cheeze, with a little BBQ sauce added.
To get really fancy stir in an egg white to the cheese sauce. Then bake it for 30 min abt 350.
Maybe add a few diced onions, some ground sausage.
And LOTS of Cheddar. Plus some parmesan.

Baked 4 Cheese Macaroni
Ingredients:
1 pound penne rigate, cook EXACTLY 7 minutes at a rapid boil
5 1/2 cups whole milk, scalded (heated just below boiling point)
1/2 cup flour
1/4 pound butter
1/4 tablespoon paprika, plus additional for sprinkling on top
2 1/2 tablespoons garlic, minced
6 ounces romano cheese
12 1/2 ounces fontina cheese
15 ounces cheddar cheese
12 1/2 ounces parmesan cheese, plus additional for sprinkling on top
Directions:
Melt butter over low heat and add flour. Whisk constantly to prevent it from turning brown. Stir in paprika and garlic. Slowly add hot milk to the butter & flour, continually whisking to reduce lumps. After all milk is added, reduce heat to medium and continue to stir until thickened. Pour mixture through a strainer to remove any lumps & garlic pieces.
Return sauce over medium heat, and add cheese. Stir continually to melt cheese.
Pour cheese sauce over cooked penne and mix well. Place in a large casserole dish and sprinkle with additional parmesan cheese and paprika. Bake for 30 minutes in a 350° F preheated oven.
You can also bake this in individual serving bowls – just make sure the bowls are oven proof and adjust the baking time to suit the portion size.
