I just love lasagna served with a nice tossed green salad. It is just the best meal and the salad lightens the lasagna. A nice garlic bread goes well with this as well as the salad.

How about Spinach Spoon Bread? If you have a crock pot, this is so easy. Spray the inside of your pot with a non-stick spray. You will need these ingredients: 1 10oz. package of frozen chopped spinach, thawed & squeezed dry, 1 red bell pepper - diced, 4 beaten eggs, 1 cup cottage cheese, 1 package (5 1/2 oz.) of corn bread mix, 6 sliced green onions, 1/2 cup butter, 1 1/2 teaspoons seasoned salt. Combine all the ingredients in a large bowl, mixed well. Pre - heat the crock pot on high. When heated, pour the batter into the crock pot. Adjust to Low heat, cook with the lid tilted to let steam escape for 3 or 4 hours. The edges should be golden, & a knife inserted into the center comes out clean. Loosen the edges & bottom with a butter knife. Invert onto a platter, cut into wedges & serve. This is delicious, looks impressive, & can even be used as the main dish. Enjoy! Good Luck & Blessings

Lasagna - you can consider it a full meal if you make it with meat and cheese. This means that you should basically just have a great big salad - several colored greens, onions, olives.
If you do decide to have a 2nd course then avoid rice (risotto) and or any other starch based foods. Your pasta in the lasagna already has enough.
Finally - note that Italians do not eat bread with their pasta - it's redundant.

There are really nice salad greens aside from iceburg lettuce. You could do arugula, mesclun or spring mix, or spinach for your side salad. Balsamic vinaigrette. For something really crazy? Put half strawberries in the salad instead of tomatos, add some pine nuts or sunflower seeds for crunch instead of croutons. It is so good with balsamic vinegar in the dressing.

You can also to a fancy bread dipped in olive oil instead of garlic bread.

You can serve sorbet for dessert.

Next time you make lasagna if you want some variety in the main dish itself, switch out the meats. I don't like seafood but I have heard of using it in lasagna. You can also use a bechamel sauce (kind of a white gravy with melted swiss cheese) instead of all tomato based sauce. You can also use any of the meats that are available ground.

My wife enjoys fried zucchini (or squash) as an Italian side dish. Just slice it into quarter inch disks. In a frying pan put just enough olive oil to cover the bottom of it. Heat the oil on medium high. Add zucchini slices to Hot oil. Cook for about 11/2 minutes on each side or until tender and browned. Serve hot with the main course.

How about some steamed cauliflower or broccoli or sauted mushrooms (with a little butter and red wine) and then a nice salad. Don't forget the garlic bread to sop up the extra sauce!

You can always go with some vegetables. Mushrooms, Onions, and zuchinni. Cook in vegetable oil in a skillet until mushrooms are cooked throughly. Season with your favorite season. They are SO good. Hope this helps!

I would just serve it with a salad and garlic bread. If you want to make it different, try using Ground Italian Sausage (I prefer Mild) instead of Ground Beef. It will definitely have more flavor to it.

if you were to ask me, it would go nice with something crispy.. say fried chicken with a different kind of marinade or probably chicken strips and a tasty tangy sauce...and don't forget the garlic bread!
