similar cheeses are going to be priced as such. you should use a good hard cheese like romano or parmasan cheese. i would recommend buying a small amount of asiago and stretching it out by using 1/2 the amount of asiago that is called for and substituting the rest with a cheap processed cheese, ie. velveeta. this will give it a nice creamy texture but will still have the great flavor that asiago imparts in the dish.

Parmisan Romano Those are propably the closest you will get. Truthfully, the reason the probably used two types of cheese in it was because one is higher in salt content and textures a little different. They are usually not much difference price, Normally you should be only be talking cents. If there is a big difference, try some place else? Or Just go to the supermarket and go to the cheese counter, they are usually stored right next to each other. Don't mess with the recipe if you liked it the way it was.

Parmesan (a little sharper) OR Romano (much sharper) OR dry jack cheese OR Sapsago (low in fat) OR nutritional yeast (This substitution works best if recipe calls for cheese to be sprinkled over a dish. Nutritional yeast is low in fat, high in protein and B vitamins, and it's not made with any animal products.) OR oil-cured black olives (as a pizza topping) OR seasoned breadcrumbs (as a pizza topping)

ungrated parmesan would work great. usually you can find grated asiago in the same refrigerated case in the supermarket as ricotta cheese.

Parmesan or romano. It is a hard grating cheese so any other hard grating cheese would be fine.
