My mom made a great meatloaf, but we just kind of throw it together and this usually ends of making more than one, like maybe another "mini" or so you cook less time. So these are just approx.(but close!) measurements.
1 3/4 lbs. ground beef'
1 can Campbell's mushroom soup
1/4 cup milk
1 egg
1 med. onion, chopped
1/2 red sweet pepper, chopped
2 handfuls of seasoned stuffing mix (cubes-approx 1/2-3/4 cup)
6-8 drops Tabasco sauce
1 tsp. dry mustard
1 tsp. Lea & Perrins Worstershire sauce
Salt & pepper (maybe 1/2-3/4 tsp salt, 1/4 tsp. pepper)
Combine milk, egg, tobasco, mustard, worstershire, salt and pepper. Add stuffing, onion, and red pepper. Then add beef, then soup. Put in meatloaf pan/pans and cook in preheated oven for approx. 1 hr to 1 hr. 15 minutes, less for smaller pan if added. *Note: sometimes, I'll add fresh mushrooms after putting 1/2 mixture into pan, then add rest of mixture.
It does fall apart a bit after cooked, but it's O.K. with me, tastes great!!! Great cold with mayo too!!!!!!!

One lb lean ground beef
Two large eggs
3/4 cup italian bread crumbs or plain
1/2 cup quaker oats
1/2 tspn cracked black pepper
1/2 tspn seasoned salt
1/2 tspn onion powder or 1/4 tsp onion powder and 1/4 tsp garlic powder
2 Tspns worcestershire sauce
1 Tspn ketchup
(You may use a packet of liptons onion soup in the place of the onion powder and worcestershire sauce, If you do add one more egg)
Take all ingredients and dump them into a bowl, take your clean washed hands and massage all the ingredients into the meat until well incorporated. You don't want to see any lingering egg strings hanging around. Make sure you incorporate it all into the meat. If your mixture is too dry add more worcestershire sauce and ketchup. If your mixture is too wet add more bread crumbs and a few oats. The mixture should be the consistency of sticky bread dough. Spray a loaf pan with cooking spray or lightly oil it, add meat mixture, punching down into corners. Bake at 350 degrees F. for approximately 40 minutes, checking after twenty minutes. The loaf is done when a butterknife inserterd in the center of the loaf comes out clean. Always test in a different spot every time. About ten minutes before done, cover top with ketchup or a mixture of one can tomato paste and one small can of tomato sauce whichever you prefer. Optional: I also like to take three american cheese slices and place them on the top right when i take it out of the oven. Happy Meatloafing.

1 cup Parmesan cheese
1 small onion diced
1 clove garlic crushed
1 pkg meatloaf seasoning mix
1/4 tsp ground black pepper
1 small can tomato sauce
Mix ground beef, bread crumbs, eggs, 1/2 cup cheese, onion, garlic, seasoning packet, and black pepper. Pour tomato sauce over the top and sprinkle with remaining 1/2 cup Parmesan cheese. Place in a loaf pan and bake at 350°F for 1 1/2 hours on bottom rack of oven.
Final internal temperature should be 170°F for ground beef. Ovens vary, so check meatloaf after 1 hour.

You can make a meatloaf out of anything you have on hand. I make it all the time without a hard and fast recipe.
Start with any number of ground meats. Make sure the fat content is low to minimize shrinking in the pan. I have used ground beef (93/7) and ground turkey, but you can also use ground pork, veal.
For each pound of meat you want an egg, a binder of some sort (a sleeve of cracker crumbs, a cup of bread crumbs). You can get really creative and add flavor by using snack crackers like Triscuits, Ritz, Cheese-Ums, Wheat Thins, or any other flavored crackers...just so long as they aren't overly greasy and can get to the same consistency as a fine bread crumb.
You can also add anything else you want for flavor to season up any way you want. You can add onions, garlic, peppers, diced tomatos or Ro-Tel (drained), olives, etc. and respective herbs and seasonings to compliment those add-ins. I really like worstchestershire sauce but if you are heavy handed with it, you need to dry it back out with more cracker or bread crumbs.
You want to frost the meatloaf about halfway through cooking with some sort of condiment: I have used ketchup (plus they flavor ketchups these days for more variety) salsa, BBQ sauce, A-1 or 57 sauce.
To speed up cooking, make a double batch and bake in a 9x13. It increases the surface area so everything cooks faster. Then you have more with the same effort and you can freeze leftovers.

I have dozens of meatloaf recipes but here is one you might like to try which is pretty straight forward:
Meatloaf Mix
2 eggs
salt/pepper
1/2 cup milk
1/2 cup oatmeal
1 T. Worcestershire Sauce
2 lbs. ground beef or chuck
1/2 cup minced or chopped onion
Mix above ingredients in large mixing bowl. Can be microwaved or cooked in oven (see below.)
Meatloaf Topping:
Catsup
Make a simple brown gravy mix from a packet. Use BBQ Sauce with a touch of brown sugar and brown mustard.
Microwave Directions:
Microwave meatloaf on high (wrap lightly with waxed paper) approx. 15 minutes. Drain, then top with your choice of sauce or gravy. Microwave another 3-5 minutes.
Oven Directions:
Cover meatloaf with foil and bake approx. 50-60 minutes. Drain, then top with your choice of sauce or gravy. Bake another 5-10 minutes.
** Will feed approx. 5 people ** You can use low-fat versions of items, too.

I once had this amazing meatloaf. My mom made it from one of the PBS shows back in the day.
1 pound ground turkey, chicken or beef
2 carrots, 2 celery stalks, 1/2 onion all finely diced
1 cheese cloth and string
1 egg
1 package of crushed saltine crackers
1 can of mushroom soup
1 cup of milk
Salt and pepper to taste
Wrap carrots and celery in cheese cloth. Boil until tender. Mix meat, onion and boiled vegetables together with egg and crackers until desired consistency. Form and bake. About 15 minutes before it's done, mix the milk and soup together and pour over the loaf.
The veggies add texture and the soup keeps it from being dry. No ketchup needed here!

1 small onion chopped
2 eggs whole
2-3 slices of bread
Wet bread with water and tear apart into small chunks. Add a regular size jar of Ragu mushrooms and green peppers (or your choice). Mix all ingredients well and put into an ovenproof dish.
Bake at 450°F about 35 mintues.
Remove from oven and add honey bbq sauce on top, enough to spread over top. Return to oven and cook on broil for 5 minutes longer; just enough to brown the top of the sauce.
A few slices of fresh green pepper rings or onion rings may be put on the top of the meatloaf for decoration.
Let cool and serve.

The BEST Meatloaf
2 pounds Ground Beef
2 Eggs
1/2 cup bread crumbs - I use homemade by toasting bread (extra toasty) and processing to crumbs. I use a multi grain bread it's heavier.
1/4 cup milk
1/2 cup catsup
1-1/2 tsp. salt
1/4 tsp. pepper
1 packet onion soup mix (I use liptons "Beefy Onion Soup Mix")
Combine all liquid ingredients as well as spices in a large bowl and mix well. Add Ground Beef and bread crumbs mixing until all ingredients come together. Your loaf will look a bit "wet" but it comes out incredibly moist after baking.
Shape meat in baking pan or loaf pan and bake for 60-75 minutes at 350 degrees.
**** Do not cover your loaf with additional sauces or ketchup ... you will find this loaf to have plenty of moisture and flavor upon completion.
