im thinking of using a grater.Will this do the trick?

Make dry toast and then the grater will work just fine. Or as an alternate, let the bread air dry for a couple of days. The bread has to be almost rock hard to make decent crumbs. Use the biggest grater (shredder) you have, which probably will have 1/4 inch holes. My mom also used an alternate method, dry toast (or air dried bread) between two dishtowels with a rolling pin or tenderizing mallet. Just roll over or pound with the mallet. The dishtowels just keep the crumbs from making a huge mess as you break up the bread. Dishtowels are much tougher than plastic bags. This rolling pin/mallet method makes larger crumbs, more like crueton (sp?) size than the grater. The key to either way is really crispy dry toast or almost rock hard air dried bread so the bread will break up easily (shattering) into smaller pieces instead of squishing. Personally, I prefer the flavor of toast over regular bread crumbs. Flavored bread, like garlic bread, usually has too much oil or butter to make good crumbs, though it would add flavoring.

You can also put the toast in a strong zip lock baggie and crush with a heavy object. I've made "breadcrumbs" with cornflakes and cheerios. Taste just as good and had the same results.

JUST POP THE BREAD OR BREADS ON ASHEET PAN AND LET TOAST ON ABOUT 300 DEGREES YOU CAN ADD DIFFERENT HERBS IF YOU WISH TRY TO KEEP A CHECK ON THE BREAD EASIER IF YOU CUT IT INTO SQUARES STIR IT AROUD AND WHEN IT IS TOASTED REALLY GOOD TAKE OUT OF THE OVEN AND LET COOL AFTERWARDS PLACE IN A GALLON SIZE ZIPLOCK BAG AND CRUSH THEM UP THEY TAST DELICIOUS AND WORK WELL WITH DIFFERENT RECIPES ALSO IT USES UP OLD BREAD

Place in a freezer bag and hit it with a rolling pin.

tip - cover freezer bag with towel first

This makes great breadcrumbs and relieves stress and tension. I would not use a grater, been there, not pretty.

if the bread is a bit dry that would be fine or you could just toast it a bit and crumble it by hand. For finer pieces a mortar and pestle might work if you do it gently.
