MEXICAN RICE
2 c. yellow rice
3 c. water
1 can Rotel diced chili tomatoes
Salt
Black beans (canned), optional
Add rice, salt and tomatoes to boiling water. Simmer for about 20 minutes. Black beans can be added to the rice or served beside. Serve with roast chicken. Serves 6
.
2 BEAN AND RICE SALAD (MEXICAN FLAVOR)
3 c. cold cooked rice
1 (15 oz.) can pinto beans, rinsed and drained
1 (15 oz.) can black beans, rinsed and drained
1 (10 oz.) pkg. frozen peas, thawed
1 c. diced celery
1 med. red onion, chopped (1/2 c.)
2 (4 oz.) cans diced green chili peppers, drained
1/4 c. snipped cilantro or parsley
GARLIC DRESSING:
1/3 c. white wine vinegar
1/4 c. olive or vegetable oil
2 tbsp. water
3/4 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. pepper
DRESSING: In screw top jar, combine above ingredients. Cover and shake well.
Mix all ingredients. Pour garlic dressing over and mix well again. Best if prepared 24 hours ahead. You can substitute a jar of Italian dressing for the garlic dressing, if you wish.
MEXICAN RICE AND BEANS
1 can (15 oz.) black beans, drained & rinsed
1 pkg. (10 oz.) frozen whole kernel corn
1 c. uncooked long grain white rice
1 jar (16 oz.) thick & chunky mild salsa
1 1/2 c. vegetable juice cocktail (V-8) (may use lo-salt V-8)
1/4 tsp. ground cumin
1/4 tsp. dried oregano
3/4 c. shredded reduced fat Cheddar cheese
Heat oven to 375 degrees. In 13 x 9 x 2 inch rectangular baking pan combine all ingredients except cheese. Cover and bake 55-60 minutes, stirring once halfway through cooking time, until rice is tender. Remove casserole from oven, remove cover and sprinkle with cheese. Let stand 2-3 minutes until cheese is melted. As a side dish, serves 8 people.

A really nice spanish rice recipe to go with those fajitas. Here is my favorite - I posted it on recipezaar and have tons of 5 star reviews - 53 total reviews averaging 4.5 stars out of 5
1 cup uncooked rice
1 medium onion, chopped (I like onions so I used a large one)
2 tablespoons vegetable oil (I used olive oil)
2 1/2 cups water
1 (8 ounce) can tomato sauce
1 small green bell pepper, chopped
1 1/2 teaspoons salt
3/4 teaspoon chili powder
1/8 teaspoon garlic powder
In a large skillet, heat the oil over medium heat.
Add rice and onion and cook (about 5-10 minutes) stirring occasionally, until rice is golden brown and onion is tender.
Stir in remaining ingredients and bring to a boil.
Reduce heat, cover and simmer for about 30 minutes, stirring occasionally, until rice is tender.

Hello. Either one of these will be a great side dish:
Mexican Rice
1 cup white rice
2 tbsp olive oil
½ onion, chopped
½ bell pepper, chopped
½ jalapeno, minced
1 tomato, seeded, chopped
1 garlic clove, chopped
1 can chicken broth
½ of 8 oz can tomato sauce
Cumin, coriander, pepper, garlic salt
½ cup fresh cilantro
1) In large sauce pan, cook rice in oil until lightly browned.
2) Add all other ingredients and bring to a boil.
3) Reduce heat to simmer and cook for 15 minutes and stir.
4) Replace lid and cook another 5 minutes.
5) Mix fresh cilantro into the rice just before serving.

Mexican Spoon Bread
16 oz can cream style corn
¾ cup milk
1/3 cup oil
2 eggs
1 cup cornmeal
½ tsp baking soda
1 tsp salt
1 can green chiles, diced
Pickled jalapenos to taste
Green Tabasco
2 cups of shredded cheddar
1) Heat oven to 400. Mix all ingredients except chiles, jalapenos and cheese.
2) Pour half the batter in a 9X9 baking dish that is sprayed with Pam. Layer chiles, jalapenos and cheese. Pour the remaining batter on top. Layer with chiles, jalapenos and cheese.
3) Bake for 45 minutes.

something other than rice:
Margarita Fruit Salad
1 small cantaloupe, scooped into balls or cut into small pieces
1 small honeydew melon, scooped into balls or cut into small pieces
2 small oranges, peeled and sectioned
1 grapefruit, peeled and sectioned
1 mango, peeled and diced
2 C. strawberries, hulled and halved
1/2 C. granulated sugar
1/3 C. orange juice
6 Tb. Tequila
6 T. orange liqueur
3 T. lime juice
1 C. unsweetened coconut flakes, toasted
Combine cantaloupe, melon, oranges, grapefruit, mango and strawberries and set aside.
In a small saucepan heat the sugar and orange juice over medium heat. Stir for 3 minutes or until sugar dissolves. Stir in tequila, orange liqueur and lime juice. Let cool.
Combine with fruit.
Refrigerate for at least two to four hours.
Just before serving sprinkle with coconut.
Serves 8 to 12.
or
Jalapeño Mashed Potatoes
2 1/2 pounds potatoes, peeled and diced
1 stick butter, cubed
1/2 to 3/4 cup heavy cream, warm
1 roasted jalapeño pepper, peeled and pureed
salt and pepper to taste
Thoroughly wash, clean, peel and dice potatoes. Place them in a pot of water with a dash of salt and bring to a boil. Reduce the heat to a simmer and cook the potatoes until fork tender, (about 12 to 15 minutes). Remove the pan from the heat and drain. In the same pot add the butter. Using a handheld masher, mash the butter into the potatoes. Add enough warm cream until desired smoothness is achieved. Season the potatoes with jalapeño, salt and pepper to taste.
Yield: 6 servings

How about some spanish rice and pinto beans cooked with some onion and garlic?There are some really good boxed rice mixes for this and use canned beans,drained and cooked after sauteeing the onion and garlic.Sliced oranges and pineapple will balance the spice.Garnish with cilantro if you have it,and sprikle a little chopped jalepano on the beans for color and flavor.Ole'

try fried greenbeans use the frenchcut style just open the can dumb the water out add a little butter in the skillet cook untill the the greenbeans turn just a little brown an serve
