Xtreme Fire Wings:
3 pounds chicken wings
1 1/2 cups hot Sauce
1 1/2 tablespoons Cajun spice
1/2 tablespoons cayenne pepper
3/4 tablespoon garlic powder
Oil, for frying
Buffalo Sauce, recipe follows
Thai Dipping Sauce, recipe follows
Combine hot sauce, and Cajun spice, pepper and garlic powder. Mix well and cover wings. Cover and let sit in the refrigerator for 24 hours.
Heat oil in a deep fryer or deep sided pot to 350 degrees F.
Remove wings from marinade and drain off excess moisture. Add wings carefully and in batches to hot oil, it splatters. Cook until crispy about 10 minutes. Serve with dipping sauces.
Buffalo sauce:
8 tablespoons softened butter
8 tablespoons hot sauce
Combine butter and hot sauce. Whisk until blended.
Thai Dipping Sauce:
1 cup Sweet Chili Sauce (available at Asian Markets or in Asian aisle of supermarket)
1 tablespoon soy sauce
Mix chili and soy sauce until well blended.

A friend of mine gave me a recipe for hot wings that are not fried but baked they are delicious. Note the recipe has changed over the years but here is the one I make now it really is good. You need chicken wings I leave them whole. In a pot combine half a stick of butter, 1 whole bottle "La Victoria" salsa brava hot, 2 packages "Good Seasons" Italian flavor salad dressing, and the juice of 1 lemon or lime. When butter is melted dip the wings into the sauce and arrange on baking pan. Bake at 350 for an hour or till done. Hope you like them

Use Franks Red Hot Buffalo Wing Sauce.
Prepare the wings and put them on a baking sheet. Yes a baking sheet. Spray the sheet with a non-stick spray. Bake in the oven at 425* for 1 hr. But watch them carefully because they might burn. Depends on how big the little suckers are. After you bake them remove them from the sheet into a bowl with ample room. Pour 3/4 cup of sauce into bowl and toss like crazy...Then enjoy with what ever floats your boat.
Use about 2 1/2 lbs. of chicken wings. Enjoy!

SPICY BUFFALO WINGS
3 to 5 lbs. chicken wings
1 lg. onion, cut very sm.
1 tsp. salt
2 pkgs. sazon
1 tsp. chili powder
1/2 tsp. red pepper
1 tsp. adobo criollo
1 bottle salsa jalapeno
1 tsp. recaito
Wash chicken wings. Mix all ingredients into a large bowl except the chicken. Dip chicken in mixture. Fry the chicken for at least 20 to 60 minutes.

Chicken wings - make sure the drum and flat are separated.
Clean with water and pat dry.
Fry in 350 degree oil until wings are crispy - about 10-12 minutes.
Toss with hot sauce of choice and blue cheese dip. If you don't like them hot - mix hot sauce and melted butter and toss wings in that.

Here's our favorite:
1/3 cup Louisiana hot sauce
6 Tbsp. butter
1 pkt. Good Seasonings Italian Dressing mix
Melt and stir it all up, toss with partially fried chicken, then bake until done.

i like the "red devil" Cayenne pepper sauce mixed with Italian dressing. it's not too hot.p.s. the recipe is on the side of the pepper sauce bottle.
