How much of a quality degradation can I expect recording a DVD at LP (long playing) compared to recording a DVD at SP (standard play)? I'm recording some very rare movies that are a little over 120 minutes in length and I want to get it all on one DVD.

Depends on your recorder. There is no standard that matches bit rate with 'LP', etc.
Check if your drive supports Dual-layer drives. That will give you the extra space you need.
Record 10 min in LP and 10 min in SP and check for yourself if there is significant degradation. I would go with the highest quality though.
If possible, use VR (variable rate recording), it usually provides better quality.
