Not alot, just a little - like park my car at the end of his street and follow him for a while when he leaves. Or to wait outside his house so I can see what his wife looks like (what if she's fat?). What if I just do it a little instead of full time? No harm, right?

I'm with everyone here. And think of it, if he was your husband would you want some lady stalking him? i think that would be a no.

Stalking is a lot like having a turb in your coffee – both leave a bad taste in your mouth. Stalking is for jealous people who can't figure out how to do it (make actual relationships) right in the first place. I had a stalker once. She made the mistake of falling asleep while doing her "stalking". She woke up to 4 flat tires.

I think it's time to escalate it a bit.
You should follow him in your car till he gets to work and see where he works.
I think next, wait for him at work around lunch time to see where he eats. After he leaves, you can go in and order the same thing he did.... that way you'll feel much closer to him.

Stalking is illegal. Think about that. If he realizes you are doing so, you can be arrested. I think it was in 1987 the Law was passed.

No, it's not appropriate to do that to anyone, married or not. If you want to know something about him, ask him. If you can't trust what he (or anyone else) says, why do you want to have anything to do with them anyway?
