MOM'S STUFFED FRENCH TOAST
1 (8 oz.) cream cheese
1 tsp. vanilla
1/2 c. chopped walnuts
1 (16 oz.) loaf French bread
4 eggs
1 c. whipping cream
1/2 tsp. vanilla
1/2 tsp. nutmeg
1 jar (12 oz.) apricot preserves
1/2 c. orange juice
Beat together cream cheese and 1 teaspoon vanilla until fluffy. Stir in nuts; set aside.
Cut bread into 10-12 1/2 inch slices. Cut a pocket in the top of each. Fill each with 1 1/2 tablespoons of cheese mixture.
Beat together eggs, whipping cream, the 1/2 teaspoon vanilla and nutmeg. Using tongs, dip the filled bread slices in egg mixture, being careful not to squeeze out filling. Cook on both sides until golden brown.
Meanwhile heat together the preserves and juice. Drizzle over hot French toast. Makes 10-12 stuffed slices. Very filling! Delicious!

STUFFED FRENCH TOAST
1 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla
1/2 c. walnuts or pecans
1 loaf white bread
4 eggs
1/2 c. whipping cream
1/2 tsp. vanilla
1/2 tsp. nutmeg
1 (12 oz.) jar apricot preserves or seedless raspberry jam
1/2 c. orange juice
Beat the cream cheese and vanilla together until fluffy. Stir in the nuts. Spread about 1 1/2 tablespoon of the mixture on a slice of bread. Top with a second piece of bread (like a sandwich). Repeat this process 10-12 times until the mixture is all used.
Beat together the eggs, whipping cream, vanilla and nutmeg. Dip the "sandwiches" into the egg mixture. Cook on a lightly greased griddle until golden brown, turn to cook the other side. Keep the cooked "sandwiches" warm by placing them on a baking sheet in a warm oven.
Meanwhile, heat together the preserves and orange juice. To serve, dust the Stuffed French Toast with powdered sugar and drizzle the warm sauce over the top. Makes 10-12 pieces.
Savoury Stuffed French Toast
Serves 4
4 double-thick slices of bread
enough sliced cheese to stuff your bread, plus any other filling stuff you want to add: ham, cooked bacon, spinach, mushrooms...
3 eggs
3/4 cup milk
salt, pepper
butter
Slice each double thick slice of bread through the middle, but not all the way through. leave the bottom crust (plus a few millimetres) as a hinge. Stuff cheese slices and whatever else you want in the middle. Beat eggs and milk together thoroughly with a bit of salt and pepper.
Melt butter in frying pan over medium high heat. Soak stuffed bread slices in egg mixture, turning to make sure both sides are well soaked.
Place each stuffed slice in the frying pan and fry for a few minutes, until browned on the bottom. Flip slices over carefully. Turn heat down to medium-low (2 or 3 on my stove) and cover tightly with a lid. Allow to cook, covered for 3 or 4 more minutes, until you can see cheese melting out of the middle. Turn over, and replace the lid. Cook 2 minutes more to ensure that the egg is cooked through and the cheese is all melted.

I love this one and so easy too.
INGREDIENTS:
French bread
1 teaspoon cream cheese
1 teaspoon favorite preserve mixture
Plus, for each egg used in the batter, add the following:
1/4 cup milk
1/4 teaspoon vanilla
1/4 teaspoon cinnamon
dash of nutmeg
PREPARATION:
Slice French bread about 1 inch thick.
Cut a pocket through the top crust of each slice, but not all the way through.
Insert cream cheese and your favorite preserve mixture.
Dip in batter and cook on griddle until done.

Last week our favorite breakfast place was serving French Toast stuffed with Blueberries & Sour Cream. Sounded awful but being the adventerous type, I gave it a try. OMG. Another thing they do is coat the french toast in Granola.

Directions:
