Here are some that start with a boxed cake mix and the bottom ones are from scratch:
LEMON POPPYSEED CAKE
1 pkg yellow cake mix
1 pkg instant lemon pudding
4 T poppy seeds
1 c water
1/2 c oil
4 eggs
Mix together the dry cake and pudding mixes and the poppy seeds. Add the water, oil and eggs, one at a time. Beat well. Pour into a sprayed cake pan (either Bundt, Sheetcake, or Loaf) and bake in a preheated 375º for 40 minutes. Glaze with butter, powdered sugar and lemon juice mix.
SPECIAL CHOCOLATE CAKE
1 box chocolate cake mix
1 pkg either chocolate, coconut cream or whatever sounds good Cook and Serve Pudding (not the instant pudding)
2 c milk
1/2 c chopped nuts
1/2 c chocolate mini morsels
Place the chocolate cake mix (dry) in a bowl. Place the pudding and milk in a pan, bring to a boil and cook according to the package directions. As soon as it is done, pour directly into the bowl of dry cake mix. Stir well. Pour into a sprayed cake pan, spreading it flat. Sprinkle the nuts over the cake and the mini morsels over the nuts. Bake in a preheated 350º oven for 25-30 minutes or until a toothpick tests clean. The chocolate will melt and be the frosting. If you use normal sized chocolate chips, they won't melt in time.
(you can use any flavor cake and any flavor cook and serve pudding to make that - let your imagination be your guide!)
1 pkg yellow cake mix
1 can mixed fruit
powdered sugar
Make up the cake mix by the package directions except use the juice from the mixed fruit in place of part of the water. Blend the fruit until it is small pieces. After all the cake mix ingredients have been mixed, add half the can of fruit to the mixture and stir until incorporated. Bake the cake according to the package directions. Place the fruit in a skillet, add sifted powdered sugar and some water and cook until it starts to bubble - you want it thin. Poke holes in your cake with a meat thermometer and pour the fruit/powdered sugar mixture over the top of the cake. The cake will be very moist and nice.
Now the homemade:
APPLESAUCE CAKE (4 generation family recipe)
1/2 c butter
1 1/2 c sugar
1 egg
2 c flour
1 1/2 c applesauce
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp cloves
1 tsp vanilla
1 tsp baking soda
1 c raisins
1 c chopped pecans
Place raisins in a pan and add water to cover. Bring to a boil, turn off heat and let sit while you make the rest of the recipe. Sift flour, cinnamon, nutmeg, and cloves. Cream butter and sugar. Add egg and vanilla and beat well. Add applesauce (can use homemade applesauce or canned) and stir well. Take 3 tablespoonfuls of water off the stewed raisins and mix with the baking soda. Add to the mixture. Stir in the flour mixture, mixing well. Add the raisins and nuts and mix well. Pour into a sprayed sheetcake pan and bake in a 350º oven for 40-45 minutes or until a toothpick is clean.
CHOCOLATE ZUCCHINI CAKE (this makes a very high sheetcake - 2" at least)(this was a converted Chocolate Banana Cake recipe)
2 1/4 c flour
1 tsp baking powder
3/4 tsp baking soda
1 tsp salt
2/3 c butter
1 1/2 c sugar
2 eggs
2 oz melted chocolate
1 tsp vanilla
2 c shredded zucchini
1/2 c sour milk
Cream the butter and sugar. Add the eggs. Add the chocolate. Stir in the vanilla. Sift dry ingredients and add alternately with the zucchini and milk. Turn into a greased or sprayed sheetcake pan. Bake 350º 30-35 minutes or until a toothpick tests clean. Frost with your favorite frosting.
BANANA BREAD (another family recipe)
1 c sugar
1/2 c butter
3 beaten eggs
3 mashed bananas
3 T sour milk
1/2 c chopped pecans
2 c flour
1/2 tsp salt
1 tsp baking soda
Sift together the flour, salt and baking soda. Cream together the sugar and butter. Beat in the eggs. Beat in the mashed bananas. Add the sour milk and mix in. Add the flour mixture and mix until well incorporated. Pour in a sprayed loaf pan and bake in a 350º for 50-55 minutes or until a toothpick tests clean.
I was the person in the office that also brought in the goodies - the 10 days before Christmas I made something different each day. These recipes work great in the mini loaf pans for actual Christmas gifts. I wrapped the mini cakes in foil and put the name of the cake on the bottom with white paper and tape. All the recipes I gave them were Banana Bread, Lemon Poppyseed Cake with Lemon glaze, Pumpkin Bread, Chocolate Chip Cake, Chocolate cake with icing, Applesauce cake, and Peanut Butter Fudge.

PINEAPPLE UPSIDE - DOWN CAKE
2 tablespoons butter, melted
1 cup brown sugar
1/2 cup chopped nuts (optional)
8 maraschino cherries
1 (16 oz.) can pineapple slices
1/2 teaspoon ginger
Heat butter, sugar, nuts, and ginger until a paste is formed. Place pineapple slices in 9 x 13 inch pan on top of brown sugar mixture; put cherry inside each of the pineapple centers. Set aside.
CAKE:
1/4 cup butter
1 cup sugar
2 eggs, separated
1 1/2 cup flour, sifted
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon desired flavoring: lemon, almond, orange, pineapple
1/2 cup milk
Cream butter with sugar. Add 2 egg yolks, beaten. Sift flour, baking powder, and salt together. Add alternately with milk to the sugar- butter mixture.
Beat egg whites until stiff (but not dry) and fold into batter gently. Pour over pineapple-brown sugar icing.
Bake at 350°F for 45 minutes or until done.
Cool 5 minutes.
Turn upside-down onto a serving plate or tray.

I like to make ice cream cone cupcakes you just make any cupcake batter and pour it into about 1/2 of the icecreamcone and place on a cookie sheetand bake at 400 degrees fareinheit for 15 to 18 minutes. Then just top with frosting.

I love to bake and I love to bake cookies especially soft sugar cookies with M&M's and Nestle Toll House chocolate chip cookies without nuts. For some reason,people really love cookies or brownies or even cupcakes,because they are very easy to eat,and pretty much everybody loves cookies and cupcakes and brownies! ;-)
