I am making a taco salad for dinner tomorrow night. it's got ground beef, cheese, onions, and crushed tortilla chips in it. What do you think would be good as another dish with that? Thanks.

yes, lettuce and olives along with the ingredients up top. i'm just trying to figure out what other type of dish I can have with it that doesn't have ground beef like tacos or enchiladas.

I would add lettuce and tomato, sour cream, guac, salsa, and some pinto beans or black beans. I ussually dont make sides to go with our Taco salads, but I do make enough so every one can have a LARGE helping. You could make....

MEXICAN CORN BREAD

2 eggs
1 c. whole kernel corn
1 tbsp. baking powder
1 c. sour cream
1/4 c. butter, melted
1 c. corn meal
1 1/2 tsp. salt
1 c. grated
Cheddar cheese
1 can (4 oz.) chopped green chiles

Beat eggs, add corn, baking powder, sour cream, butter, corn meal and salt. Stir until well blended. Pour half batter into a well greased ring mold. Place the chilies and 1/2 cheese over batter. Add remaining batter and top with rest of cheese. Bake 12 to 14 minutes in 3 minute intervals turning dish 1/4 turn. It's done when mixture pulls away from sides and top with rest of cheese. MEXICAN HONEY PUFFS (Sopapillas)

1 tbsp. shortening
2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
2/3-3/4 c. cold water
Vegetable oil
Honey butter or cinnamon sugar

Honey Butter: Heat 3/4 cup honey and 2 tablespoons butter until hot.
Cinnamon Sugar: Mix 3 tablespoons sugar and 1/4 teaspoon ground cinnamon.

Do Ahead Tip: Puffs can be reheated uncovered in 350 degree oven.

Cut shortening into flour, baking powder and salt until mixture resembles fine crumbs. Gradually add enough water to make a stiff pastry like dough, tossing with fork until all flour is moistened and dough almost cleans side of bowl. Gather dough into a ball; divide into halves and shape into 2 flattened rounds. (Cover half to prevent drying.)

Heat oil (1 1/2 to 2 inches) to 360 degrees. Roll 1 half of dough 1/8 to 1/4 inch thick. Cut into rectangles. 3 x 2 inches or 3 inch diamonds.

Fry 3 or 4 rectangles at a time, turning once, until puffed and golden brown. 1 to 2 minutes on each side. Drain on paper towels. Repeat with remaining dough. Dip puffs into Honey Butter or sprinkle with Cinnamon Sugar.

POCO PEPPER SNACKS "MEXICAN FLAVOR"

1 (3 oz.) pkg. cream cheese, softened
1/2 c. shredded cheddar cheese
2 tbsp. chopped green chilies
2 tbsp. chopped ripe olives
1 tsp. instant minced onion
5 drops Texas Pete hot pepper sauce or Tabasco sauce
1 (8 oz.) can Pillsbury refrigerated quick crescent dinner rolls

In small mixing bowl, combine all ingredients except rolls, blend well. Separate crescent dough into 4 rectangles. Press perforations to seal. Spread 1/4 of cheese mixture over each rectangle.
Starting at long side, roll up each rectangle, jelly roll fashion. Cut each roll into 10 slices. Place cut side down on greased cookie sheet. Bake 12-15 minutes at 375 degrees until golden brown. Serve hot. Yield 40 appetizers.

A lot of times when I make something that's hard to select a side dish for, I'll add a salad (obviously not in this situation though), or bread (again probably not here), or a large side of fruit.

One I use that would work well is baked apples... I cut up an apple per person (Golden Delicious work well, but you could try any) leaving the skin on, then sprinkle on a fair amount of cinnamon and brown sugar; I stir and cover, then just microwave for about 5 min or more (for 2-3 apples).

Or I'll just cut up a few different fresh fruits, or make a fruit-based salad like Waldorf salad, or cut fruits mixed with yogurt/sugar and sometimes a bit of mint.

I like REAL tacos or taco salad or a good old fashion burrito. Where I come from no one ever ate soft shell tacos but then I am old school and that is some new fangled thing.

Your recipe sounds very good.

However, a real taco salad has an actual tossed salad on top of it. Here is another recipe for you to make later on. No need to serve anything else with it:

Pinto beans cooked and mashed (like mashed potato) on the bottom;

Cooked ground beef and chopped white onions on top of the beans;

Salsa sauce on top of the meat;

Cheese on top of the salsa sauce;

Tossed salad with chopped up tomatoes on top of the cheese;

Some people top with sour cream.

(do not mix in crushed tortilla chips in the above recipe)

If you do not have the taco shells to serve this in, you can use pretty bowls.

Shrimp quesadillas are easy and tasty. Just get some soft flour tortillas, put some small cooked shrimps in between them with some cheddar cheese (like a sandwich), put them on a cookie tray with a little pam sprayed on it and bake them for about 5 or 10 minutes or so. Serve them with a dollop of sour cream on top and some salsa. mmmmm!

I make taco salad as well. Mine is made with crushed Doritos, kidney beans and my dressing is 1 sm. bottle each of french and thousand island dressing.(all you other ingredients too!)
To answer your question I serve it at alot of my cookouts. grilled chicken usually goes over well.
I've also served it as the main dish in tortilla roll-ups!
