I am planning a Tuscan themed party and was wondering if anyone knew the kind of flowers that you see (native or otherwise) in Tuscany? Sunflowers? Any advise appreciated.

It depends on the season you're coming.
Sunflowers are the most common but this is just from June till end September. It's obvious that in winter time flowers will be not so many in this region unless you'll be visiting some botanic garden.
In spring/summer the fields are covered by wild flowers and this differs a lot from an area to another one.
However even if you're coming in a period when the flowers are not that many, you'll be in any case surprised by the awesome landscapes of my marvelous region.

Lots and lots of sunflowers, any wild flowers would work well, too. Dont forget the grape vines and grapes.
