I decided to ask a fun question, and I'm interested in trying out a new meat loaf . Does anybody have any ideas ?

My Stuffed Meat Loaf -Doris Roberts
from Everybody loves Raymond

2 pounds ground beef
2 eggs
1 medium onion, chopped
A couple of pinches of parsley
1/2 cup Italian bread crumbs
2 cloves garlic, chopped
Salt and pepper
8 ounces ricotta cheese
A couple of pinches of dried basil
1 (28-ounce) can of whole peeled tomatoes with basil, Italian Bread crumbs
1. Mix first 6 ingredients, salt and pepper to taste, and mold in standard-size loaf pan.
2. Scoop out the center of the loaf.
3. In a separate bowl, mix cheese and basil, salt and pepper to taste, and fill in the hole with this mixture.
4. Replace scooped-out meat to cover the cheese mixture.
5. Top with tomatoes. Bake at 350 degrees for 45 minutes.
6. Sprinkle bread crumbs over the top and bake another 15 minutes. Makes 6 to 8 servings.
Ntimid8r's Note: This meatloaf was very delicious and not your typical meatloaf. I used Winn Dixie brand whole plum tomatoes with basil. When I added the tomatoes , I crushed them. After the meatloaf was done, I drained the grease from the meatloaf and made a tomato gravy using the tomato juices, little cornstarch and water. Very Very good.

Clare's meatloaf- Maui Island Cookbook
1/2 c. Grape-Nuts cereal
1 pound hamburger
1/4 c. chopped onion
1/2 c. water
1 egg, slightly beaten
1/2 tsp. salt
Mix Grape Nuts and water; let stand for 2-3 minutes. Combine rest of ingredients; mix well. In a greased pan, shape into loaf. Bake one hour at 350'. To get moist loaf, cover with aluminum foil for first 30 minutes and then remove.

NTIMID8R'S NOTE: This meatloaf was good and VERY moist. Next time I may add Italian Seasoning. I let it bake for 50 minutes instead of an hour.

This is my personal recipe that I came up with. My family absolutely loves it and so do my friends, enjoy! Moms Sweet & Sour Meatloaf Sauce: 2 small cans tomato sauce 1/4 cup Worcestershire sauce 1/2 onion chopped 1 tablespoon dried parsley 1/2 cup brown sugar Mix all sauce ingredients together in bowl, set aside. Ingredients (Meatloaf): 2 pounds ground beef 1/2 chopped onion 1 egg, beaten 1/2 cup or more if needed, quick oatmeal (not instant) 1 teaspoon garlic salt In another bowl add ground beef, 1/2 chopped onion, egg, oatmeal, garlic salt, pepper, and 1/3 of the sauce mixture. Mix together well. Place in pan, making space between meat and pan around edges with fingers. Flatten top, spread more sauce over top and cook 1 hour, at 350F. Drain off grease half way (30 min) and add more sauce. Reserve some sauce for adding when served. The oatmeal disappears, is healthy and you can't taste it. It just holds it together better. Add more if you need it.

This is the easiest meat loaf you will ever make.
1 lb. of ground beef or ground chuck
1 can of Spanish rice
1 egg
minute rice
Mix the ground beef or chuck, spanish rice, egg and salt and pepper to taste. If it looks a little soupy add a little of the minute rice.
Bake at 350 degrees for about 40 minutes or until the juices run clear. About 10 minutes or so before end of the cooking time take out of oven and spread some ketchup of tomato sauce of the top and return to oven for the remainder of the cook time.

Note: By using the spanish rice you don't have to chop any onions or peppers, because they are already in there.

Cajun-Seasoned Meatloaf
INGREDIENTS:
1 to 1 1/2 pounds lean ground beef
1/2 pound ground pork or more beef
1 large egg
1/3 cup finely ground bread crumbs
1 medium tomato, seeds removed, cored, finely chopped
1/4 cup onion, finely chopped
1/4 cup red bell pepper, finely chopped
1/4 cup celery, finely chopped
1 1/2 to 2 teaspoons Cajun or Creole seasoning mixture
1/2 teaspoon salt
dash pepper
2 teaspoons Worcestershire sauce
ketchup or chili sauce, optional
PREPARATION:
Combine all ingredients except ketchup or chili sauce; pack into a loaf pan or meatloaf pan, or shape into a loaf shape and set on a rack or crumpled foil on a shallow baking sheet. Try to keep it out of the drippings with a piece of crumpled foil or a wire rack. If desired, spread ketchup or chili sauce over top about 10 minutes before done. Bake at 350° for 60 to 70 minutes.

INGREDIENTS
1 egg
3/4 cup milk
1 cup (4 ounces) shredded cheddar cheese
1/2 cup quick-cooking oats
1/2 cup chopped onion
1 teaspoon salt
1 pound lean ground beef
2/3 cup ketchup
1/2 cup packed brown sugar
1-1/2 teaspoons prepared mustard

SERVINGS 8

DIRECTIONS


In a bowl, beat the egg and milk. Stir in cheese, oats, onion and salt. Add beef and mix well. Shape into eight loaves; place in a greased 13-in. x 9-in. x 2-in. baking dish. Combine ketchup, brown sugar and mustard; spoon over loaves.

Bake, uncovered, at 350° for 45 minutes or until the meat is no longer pink and a meat thermometer reads 160°.

Preheat the oven to 350 degrees.

You can take 1 pound of ground beef then add sauteed onions,peppers and garlic and salt and pepper and mix it with the ground beef. The add 1 cup of parmesan cheese, 1 cup of ketchup, 1 cup of seasoned bread crumbs, 2 eggs then mix it all up.
Mold the mixture into a loaf and wrap in bacon then cook it!!!
I made this recipe and it tasted delicious!!!!

one pound ground turkey
one pound ground pork sausage

look for the leanest and lowest sodium sausage you can find.
Ground Italian sausage is good but it's a little spicy

one cup cooked oatmeal(healthier than eggs and saltines and you won't even taste the oatmeal)

one bell pepper
one onion
garlic
salt
pepper
oregano

I use fresh garlic cloves(two of them) but you can use a teaspoon of garlic powder if you like.

mix the meat and oatmeal together with the bell pepper and onion.
you'll have to chop the veggies.

add 1/4 teaspoon each of salt, pepper and oregano and garlic.

mix it all up

bake it in a bread pan covered with foil at 325 for 35 to 45 minutes

Some people cover the top of the meat loaf with Heinz but I like BBQ sauce better.

1/8 tsp. garlic powder
1/8 black pepper
2 tsp. soy sauce
1/2 can cream of chicken mushroom soup
1/4 c. chopped green pepper
Mix lightly beef, onion, egg, bread, garlic, pepper, and soy sauce. Preheat oven to 350 degrees. Layer meat, cheese, and pepper. Cook 1 hour; top with soup last 15 minutes. Precook onions and pepper for 1 minute. Microwave. Handle meat as lightly as possible when mixing and forming try to seal in cheese.

*******Long Time Family Meatloaf Recipe
1 lb. ground beef
1 egg
1 pkg. crackers, crushed or 1 c. bread crumbs, plain or flavored
1 med. onion, chopped
1 med. green pepper, chopped
1/2 c. chopped celery
1 med. apple or pear, chopped
1 tsp. pepper, black or red
1 tsp. low sodium salt
Ketchup or barbecue sauce
Your favorite cheese
3 slices bacon (optional)
Place all of the ingredients in a large bowl, except for the bacon. Now, here comes to fun part. Pretend you're a little kid again and squish everything together. It fells real gooey between your fingers. After you have had enough fun place half the mixture in a small rectangular baking dish. Place the slices of cheese on to the mixture and then place the rest of the mixture on top of the cheese.
If you choose you can place the bacon on top of the meatloaf. Preheat the oven to 350 degrees. Place the mixture in the oven and bake for about 1 hour.
Remove from oven and allow to cool for a couple of minutes.

*******Slower Cooker Meatloaf

INGREDIENTS
2 pounds lean ground beef
2 eggs, beaten
3 tablespoons ketchup
3 tablespoons dry onion soup mix
3 tablespoons steak seasoning
3 tablespoons ketchup
DIRECTIONS
In a medium bowl, mix together the ground beef, eggs, 3 tablespoons ketchup, onion soup mix and steak seasoning using your hands. Pat lightly into the bottom of a slow cooker. Spread remaining ketchup over the top. Cover, and cook for 6 to 8 hours on Low, or 4 hours on High.
Variation

Layer half of the meatloaf in the bottom of the slow cooker, and top with 1 cup of shredded cheese. Top with remaining meat and glaze; cook as stated above.

Got this one from Rachel Ray on one of her 30 minute meals shows.

1.5 lbs. Ground beef
1/2 c. onion
1/2 c. green pepper
dash of seasoning salt
1 c. bread crumbs (I like the seasoned ones)
1 egg
splash of milk

Mix all above ingredients thoroughly and move to casserole dish.

Mix 1 c. barbecue sauce, 1/2 c. salsa, and 1 tbsp. of worstershire sauce and spread over top. You can double and have a reserve sauce.

Bake at 400 degrees for about 35 minutes.

It is delightful. Try serving with smashed potatoes with creamcheese or sour cream and chives.

My mom would make pizza loaf... mix the meat with pizza sauce, put half the meat in the pan, spoon on chopped veggies (that you have precooked), mozzarella, and pepperoni in the middle, then put the other half of the meat on top. Cover with more pizza sauce and Parmesan cheese and bake. I make it sometimes and my kids like it.
