The best estimate history gives us is around 9000-8000 BC in the Middle East, when cows were first domesticated (i.e. farmed commercially). It was found that consuming the milk off an animal was considerably more efficient than killing it for meat, though quite whom made this breakthrough, nobody knows. It's the perfect crime really: store heapfuls of dry grass for the cows to eat, then milk the cows for humans to eat. It's a natural food processing plant that continues to be used to this very day.

It was a man called Bob, in 1131bc (ish). He'd seen someone milking a goat and thought perhaps he'd get more from a cow.

I imagine whoever it was saw a baby calf drinking the mothers milk, killed the calf for sandwiches and then thought 'I know, I'll make some cheese.'
