3 slices bacon
2 boneless chicken breasts, halved lengthwise,and sliced to desired thickness
2 tablespoons butter
1 small onion, diced
1/2 red bell pepper, diced
2 cloves garlic, minced
1 jalapeno pepper, chopped,and seeded if desired
3 tablespoons flour
3/4 cup chicken broth
1/2 cup milk
1 cup shredded monterey jack pepper cheese
1/4 cup sour cream
1 pinch cayenne
penne pasta
3 green onions, tops thinly sliced
Over medium heat, cook bacon until semi-crisp, reserving drippings.
Drain bacon on paper towels and crumble when cool.
Sauté sliced chicken in bacon drippings just until no longer pink.
Remove from pan and set aside.
In the same skillet, add the butter and cook onion, peppers and garlic until just tender.
Stir in the flour and cook for 1 minute.
Add broth and milk. Cook and stir until bubbly.
Stir in cheese and sour cream; then add the chicken and crumbled bacon to the sauce.
Reheat, stirring to melt cheese, but do no allow to boil to avoid separation. If the sauce is too thick, add the remaining 1/4 cup chicken broth and/or a little more milk.
Serve over cooked penne pasta and sprinkle with chopped green onions before serving.

Pepper Jack Chicken Breasts
4 boneless skinless chicken breasts, 1/2 " thick
honey mustard
6 slices bacon, sliced in half
1/2 teaspoon McCormick's Season All
1 cup sliced mushrooms, drained
3 cups shredded Pepper Jack or CoJack cheese
Rub chicken breast with Seasonal All and set aside to marinate for 1 hour.
While the breast is marinating fry bacon crisp or desired doneness and drain.
Sauté chicken breasts on medium heat in pan with just enough oil to prevent sticking or better yet, grill over charcoal.
Cook on both sides until a slight golden color and cooked in the middle but not dry.
Remove from pan and place in a 9 x 13 dish.
Spread chicken breast with honey mustard, cover with a layer of mushrooms, three pieces of bacon and then sprinkle with shredded Pepper Jack cheese, chicken should be covered with shredded cheese.
Bake at 350 degrees about 15 minutes or until cheese melts.
Eextra honey mustard may be served on the side.
Great served on a bed of lettuce with chips on the side.

I like to make mac and cheese with pepper Jack. And add an baked chicken cut into piece. Works great and quite tasty.

I like these. You can also make them with ANY cheese you like.
1 pkg. refrigerator crescent rolls
3-4 chicken breasts poached then shredded
1 can of cream of mushroom soup
cheddar cheese
fresh mushrooms sliced and sauteed in olive oil (optional)
I've been making these for so long that I no longer use a recipe or measurements. I will give you my method. It really is hard to screw up.
Mix your shredded chicken with cheese of choice and mushrooms. Us it as a filling for your crescent rolls. Roll them up and place in a casserole dish. Mix your can of condensed cream of mushroom with 1/2 can of milk and pour over top of your crescent rolls. Bake at 350 until crescents are golden brown.

You can make quesadillas, or enchiladas or even a chicken taco salad any Mexican dish can be changed to chicken and pepper jack cheese instead of beef and cheddar. Good Luck!
