I must have been planning on making something when I bought them. But, I just can't seem to remember and have them and don't know what to do with them. What do you use them for?

Capers are the green flower buds from the Capparis Spinosa bush. Capers are actually immature buds that are picked from bushes and are used as seasoning in many dishes. The caper bush grows extensively in the Mediterranean and Middle Eastern region and so it is most often used in their native cuisine. Capers are also cultivated in Spain, Cyprus, Sicily, Greece and France. When the capers are freshly picked, it does not have any tangy or zesty flavor but it is somewhat bitter. But after sun drying them and then brining, it develops a sharp flavor which can impart a certain savoriness to a dish. Capers comes in a variety of sizes, from peppercorn sized ones to ones that are as large as olives. Smaller the size of capers, the more valuable it is regarded to be.

Not to sound to simple, but capers are high quality pickles. They are pickled, salty and yummy. If you make your own tarter sauce dice some up in there. Really good. They are also good with just about any fish. You can almost nix any other acid (lemon) if you use enough capers. I like them diced in my dishes, but that's up to you. Really use can use them anywhere you like something acidic and salty. Dips, fish, veal, chicken breast, thin gravies, etc.

I just bought another jar this morning. I mostly use them for veal piccata. But they're also excellent in a muffaletta spread, it's a mixed olive relish that's great on sandwiches.

Chicken piccata, spaghetti puttanesca, on salmon with butter sauce, or in a salad.

I add them to stews, soups, chicken rice soup, when browning ground meat, when preparing yellow rice recipes (Spanish rice, Mexican rice, Puerto Rican rice.)
