We just made a huge batch of applesauce
3 lbs apples, peeled and chopped
2 T cider or butter
in skillet, cook until tender (20 min)
add:
2-3 T honey or sugar
cinnamon stick
stir until sugar is dissolved
remove cinnamon stick and mash apples.
we used it as a pie filling, over yogurt or cereal, etc. It freezes really well.

Apples: make apple crisp or cobbler and freeze them for future desserts.
Zuchinni: slice lengthwise, cover with honey mustard dressing, and grill under the broiler - yum! Zuchinni is wonderful in breads and cakes.
Eggplant: slice into layers for a fabulous vegetable lasagna.

You might want to invest in a food dehydrator. You just dry your apples or zucchini, then months or years later you soak it in water and then it becomes delicious again.

can the apples in a sugar syrup[u can make pie ,apple cinnamon pancakes,muffins ect.....]zuccini peel then grate and freeze for zucchini bread

This cobbler is not only great tasting it will amaze your family and friends when they find out what the mystery ingredient is.
Zucchini Cobbler ( tastes like apple pie..really !)
8 cups zucchini
( I use zucchini about 6 inches in length.. no need to remove the seeds this way. 1 six-inch zucchini will equal about 1 cup chopped. Large zucchini will need the seeds removed.)
1 cup sugar
3 tablespoons flour
1 dash salt
1 teaspoon cinnamon
3/4 teaspoon cream of tartar
1 tablespoon lemon juice
1 (10 ounce) can crushed pineapple
1 box yellow cake mix or white cake mix (Jiffy)
1/2-1 cup butter, melted
1/2 cup nuts, chopped (optional)
PEEL AND CUT ZUCCHINI ( I use a potato peeler ) LENGTHWISE, STRIP OUT SEEDS, CUT IN 1/2" SLICES, COOK IN BOILING WATER UNTIL TENDER.
DRAIN, COOL IN COLD WATER FOR 5 MINUTES.
DRAIN, ADD SUGAR, FLOUR, SALT, CINNAMON, CREAM OF TARTER AND LEMON JUICE.
STIR WELL.
ADD PINEAPPLE AND JUICE.
MIX WELL.
DO NOT BEAT.
POUR INTO A GREASED BAKING DISH (13X9" pan).
SPREAD DRY CAKE MIX OVER TOP.
DRIZZLE BUTTER OVER CAKE MIX.
SPRINKLE NUTS ON TOP.
BAKE AT 350F degrees FOR 60 MINUTES.
Zucchini Hash Browns
2 medium zucchini
1/2 cup egg substitute (Egg Beaters) or 2 eggs
1/2 cup onions (chopped)
3/4 cup dry breadcrumbs
1 teaspoon salt
1 teaspoon garlic powder
Shredd the zucchini as you would potatoes for hash browns.
Mix all ingredients together in a large bowl.
Place on a George Foreman Grill in 1/2 cup portions. Cook for about 7 minutes or until golden brown.
Note: If you do not have a George Foreman, you can pan fry each side until golden brown. Frying them is still tasty but less healthy (because of the oil), and they fall apart more easily.
Zucchini Pancakes
2 cups finely shredded fresh zucchini (, 2 - 8-inch zucchini required)
4 large eggs, beaten
3/4 cup all-purpose flour
1/2 teaspoon granulated sugar
1/2 teaspoon salt
3 tablespoons extra virgin olive oil or vegetable oil
4 teaspoons baking powder
1/4 cup melted butter or margarine (, for rub)
Wash and shred zucchini on a fine shredder (DO NOT PEEL).
In a large mixing bowl, beat eggs; add shredded zucchini and mix well using a fork.
Add flour, sugar, salt and olive oil and stir well to blend.
Finally, add baking powder and mix using a spoon (Batter consistency should be like heavy whipping cream).
Preheat griddle to 425- 450°F.
If using a heavy duty frying pan, heat to medium-high heat; adjust heat if necessary.
Rub grill or frying pan with oil before cooking each batch of pancakes.
Spoon batter onto hot griddle (about 2 tablespoons for each pancake).
Cook until bubbles on the top of the pancake almost stop, about 1 1/2 minutes; turn pancake over and continue to cook for another 1 to 1 1/2 minutes or until pancakes are done.
When done, rub pancakes with melted butter and place in a preheated 250 F oven to keep warm until the remainder are cooked, or serve immediately
.
Serve with your choice of jams or syrups.
Also very good with sour cream or yogurt along with your choice of jams or syrups, or you can eat them just plain.
These pancakes are delicious for breakfast, brunch or just as a snack anytime.

You can make applesauce and freeze it... Then when you are recipe use it in place of oil in a recipe...It does freeze well.. You can also dice them up and add a bit of lemon juice and freeze them like that to stop them from browning..
