First: Take your CAPS LOCK OFF.
Them you either gently boil it until it is soft when touched by a knife blade - serve as a veg with butter and pepper, OR, for stuffing, cut into thick slices, scoop out the seeds and fill with mincemeat and onions and bake in the oven ! ! !

340g (12oz) Cooked Rice or Beans
110g (4oz) Mushrooms
1 Large Marrow
3 Tomatoes
3 Sticks Celery
1 Red Pepper
1 Onion
1 Apple, chopped
Paprika [Optional]
Dried Chilli [Optional]
Curry Powder [Optional]
Pre-heat oven to 170°C: 325°F: Gas 3.
Cut the marrow (either in half or at one end) scoop out the fresh.
Clean the vegetables slice the mushrooms and cut the onion, pepper, celery and apple into a fine dice.
Fry all of the vegetables, (adding some of the marrow fresh if desired) until softened.
Add the apple and spices (if used).
Fry for 1-2 minutes.
Stuff the marrow with the mixture.
Place in an ovenproof dish and bake for 30-45 minutes.
Or You could just stem it with salt and pepper

I just wanted to say CONGRATULATIONS!! Growing your own veggies is so much fun and they taste so much better than the store bought ones! I like marrows stuffed and baked like this: 1 medium-sized marrow fat for greasing 1 small onion 200 g (7 oz) minced beef 100 g pork sausage meat or 100 g extra minced beef 1/2 cup (30 g) soft white breadcrumbs 1 tbsp chopped parsley 1 tbsp chopped chives 1 tsp Worcestershire sauce salt and pepper 1 egg 250 ml cheese sauce 1. Halve the marrow lengthways and scoop out the seeds. 2. Lay each half side by side, in a well greased, large, shallow casserole. 3. Skin and chop the onion finely or grate it. Put into a basin with the beef, sausage-meat, if used, breadcrumbs, parsley, chives, Worcestershire sauce, and seasoning. Mix well. 4. Beat the egg until liquid and use it to bind the mixture. 5. Divide the stuffing between each marrow half. Cover the dish and bake in a moderate oven, 180°C, Gas 4, for 1 hour. 6. Strain off most of the liquid in the casserole. 7. Pour the cheese sauce over the marrow and bake for a further 20 minutes, uncovered, or until the sauce is golden-brown

Just simply as a vegetable. Just take the outside skin off, then scoop out the inner seeds, slice up into smallish pieces (1-2"), then place in a baking tray brush with olive oil and put some oil into tray and garlic and pepper and just bake for about 30 minutes approx until tinged with brown. You will find the marrow pieces sweet and juicy. You will find the pieces will shrink up a bit because there is a lot of water in marrow.

The stuffed baked marrow mentioned above is delicious, but another option is to cut the flesh into small chunks, coat in seasoned flour, then toss in hot olive oil with crushed garlic and chopped parsley.

I peel it, gouge out the seeds then place it in a shallow casserole dish and fill with either a rice mix or something like a bolognaise mix. Cook in the oven - yummmy.
