Good sausage is fatty without being greasy. It's a hard balance to get right. Most sausage is put together so cheaply that it doesn't get the balance just right. Other than that, the spices make all the difference.

Well, STAR, I guess it's the PIG in us that makes us like sausage! I eat it sometimes when it's cooked right it's not so greasy and nasty! It has a good taste at some restaurants. Wish you well! Jimmy.

Ooohhhh, SAUSAGE? Why didn't you say so in the first place? Breakfast links are about the only sausage I can deal with. The chicken ones aren't bad.
